This healthy low-carb Indian butter chicken curry is supremely healthy. It's an Ideal choice for a person who is on a keto or low-carb high protein diet.
2lbboneless skinless chicken breastscut into bite size cubes
½teaspoonred chili powder
1teaspoonground cumin
1teaspoonground coriander
2teaspoonsgarlicminced
1½teaspoongingergrated or minced
½teaspoonturmeric
½teaspoonsaltor as per taste
Sauce
¼cupunsalted buttergrass-fed or Irish butter
½largeonion
¾cupplain yogurt or greek yogurt
2tablespoonsgaram masala
129-oz cantomato puree
Garnish (optional)
½cupcilantrochopped (fresh)

INSTRUCTIONS
Place chicken in a large bowl. Add all the ingredients for the marinade. Use your hands or a spatula to coat the chicken with the marinade. Tightly cover with plastic wrap. Stick it in the refrigerator for 1 hour or overnight (if you have time). (The longer it stays in the refrigerator, the better)
Melt butter in a medium-sized skillet over medium-high heat. As the butter melts, add thinly sliced onions and cook for until they turn translucent.
Add tomato puree, garam masala, and yogurt. Stir well until fragrant.
Remove from the sauce from the skillet and transfer it to a food processor or Ninja foodi. Blend until the sauce looks silky smooth, and velvety.
Return the sauce to the skillet. Add marinated chicken and toss well to coat the chicken with the sauce.
Cover with a lid and cook on low heat for , stirring every few minutes until the chicken is fully cooked and the sauce is thickened.
Garnish with fresh chopped cilantro. Adjust salt to taste if needed.
