Sheet Pan Harvest Baked Apple Chicken with Sweet Potatoes
Easy and Quick Sheet Pan Apple Chicken with Sweet Potatoes, Brussels Sprouts, Onions and Green Beans tossed in a Maple Mustard dressing is a perfect fall dinner recipe. It makes for a great weeknight chicken dinner recipe for the family in one pot.
2poundsChicken Breastscan replace with Boneless Chicken Thighs
1pound Brussels Sproutscut in half
2largePink Lady Applescut into large slices, can replace with Granny Smith Apples
1pound Green Beansedges trimmed
1medium sizedSweet Potatopeeled and diced
1medium sizedOnioncut into wedges
½teaspoonGround Cinnamon
½teaspoonKosher Salt
½teaspoonGround Black Pepper
1stickUnsalted Butter
2tablespoonPure Maple Syrupcan replace with Honey or 1/2 cup of Brown Sugar
1cupCraisins
for the sauce
½cupApple Juicefresh
2teaspoonApple Cider Vinegar
1teaspoonYellow Mustardcan replace with dried mustard or dijon mustard
½cupChicken Broth
for garnish
½cupParmesan Cheesefreshly grated
½teaspoonFresh Rosemaryminced

INSTRUCTIONS
Preheat the oven to 400F and grease the sheet pan with cooking spray.
Heat Butter in a cast iron skillet. As the butter melts pour Maple Syrup in it. Now add the apples and cook for 2 min.
Next add the chopped veggies. Season with Salt, Pepper and Ground Cinnamon. Cook for 3-4 min. Set aside
In the same pan, add some more oil. As the oil shimmers, add the chicken. Season with salt and pepper and cook for 4-5 min or until brownish in color. Set aside
Combine all the sauce ingredients to make the sauce in a medium sized mixing bowl. Set aside.
Transfer everything to the baking dish. Pour the sauce on top and bake @400F for 10 min.
Garnish with fresh Rosemary springs, freshly grated Parmesan Cheese, Craisins and serve!

Notes
I have used Pink Lady Apples as they are juicy, sweet and tarty. If you use Granny Smith Apples then they will be a bit tarty. So you would want to add a tablespoon more of Maple Syrup to sweeten this dish.
