Healthy Zucchini Muffins with Chocolate Chips are fluffy, moist, and soft Zucchini muffins. These are Vegan and Gluten-Free Zucchini Muffins with Chocolate Chips.
Grate the unpeeled Zucchini using a Box Grater. Take it all up in a muslin cloth and squeeze out the excess water.
In a bowl, combine the grated Zucchini with Mashed Bananas, Coconut Sugar, Light Olive Oil, Vanilla, Baking Soda, Baking powder, and Oatmeal Flour, Stir until combined
Pour the batter into a greased muffin tin. Add the Chocolate Chips on top. Bake these Zucchini Muffins with Chocolate Chips @ 350°F (180°C) for 15 min. After the Muffins get baked, allow them to cool in the same muffin tin for 5 minutes.
