Peppermint Cheesecake Oreo Truffles are no-bake Christmas desserts that are made with oreo crumbs, peppermint cheesecake filling, and melted white chocolate. These are coated with crushed Peppermint candies. These also make for a great treat for kids or food gifts for Christmas.
Take Oreos in a zip-lock bag and pound using a rolling pin until you have the crumbs. You can also make Oreo crumbs by pulsing them in a food processor.
In a large mixing bowl, take Melted Butter and Cream Cheese. Beat these two using a handheld mixer with a paddle attachment or stand mixer until it gets smooth and creamy. Add the peppermint extract, vanilla extract, and granulated sugar. Beat until combined. Combine this Peppermint Cheesecake filling with Oreo Crumbs
Make small truffle balls. They will not be in perfect shape right now as they will be too wet. So, just randomly make balls and place them on a dish. Freeze the Truffles for 20-30 minutes. After freezing, get them out and re-shape them. Freeze again for 10-15 more minutes
Melt the White chocolate melting wafers in the oven at 30-second bursts. Stir in between each burst so that there are no lumps. If it's not melting, add few drops of coconut oil or half a stick of butter and then melt it. Dip the Truffles in white chocolate and coat evenly. Take it off using a fork and drip off the excess by tapping it on the edge of the plate.
Toss the truffles in a plate filled with crushed Peppermint candies. Coat evenly and serve!
