- First, prepare all your ingredients. Dice the granny smith apples and brown onions evenly and chop up the English muffins in bite-sized chunks. Next, remove the stems from your fresh herbs as well.
- Take a large heavy skillet, put it on the stove, and turn the flame on to medium heat. Then add your sausages to the skillet and cook until they are brown and slightly crisp on the surface. Once that’s done remove them from the skillet and place them on a plate that is lined up with paper towels so that they can dry off.
- You are not yet finished with the skillet so don’t clean it yet. Instead combine shredded turkey, diced granny smith apples, and brown onion to the skillet and let it cook until the onions are soft and brown. Add fresh sage for flavoring as well. With this done, take the skillet off the heat completely and set it aside so its contents can cool.
- Now take a large bowl and crack your twelve eggs inside it. Then combine your half and half milk along with seasonings like freshly ground black pepper and kosher salt. Mix this mixture thoroughly until it looks uniform and even.
- Take a large casserole pan and rub butter inside it so that it can be well-greased. Next, it’s time to make the layers for your casserole. First, add a layer of sausages and the mixture you prepared. Then top that layer with cheese. Thanksgiving Breakfast casserole
INGREDIENTS
- 2 pounds all natural sage sausage make sure it is 100% fresh pork
- 2 Large Granny Smith Apples diced
- 1 Tablespoon Fresh or Dried Sage
- 12 large eggs
- 2 cup whole milk can replace with 1% or 2%
- ½ cup half and half
- kosher salt as per taste
- Freshly Ground Black Pepper
- Salted Butter to grease the pan
- 6 pieces English Muffins cut into bite size chunks
- 2 cups grated white cheddar cheese
- 2 tablespoons freshly chopped parsley
INSTRUCTIONS
- Add sausages to a large skillet over medium high heat. Cook until browned or completely cooked through 7-9 minutes. Remove the sausages using a slotted spoon and drain them on a plate lined with parchment paper.
- Add granny smith apples, onions, and sage to the same skillet. Cook until the onions soften for 2-3 minutes.
- In a Pyrex glass measuring jar combine eggs, half and half, milk, salt, and freshly ground black pepper until combined.
- Lightly grease a 9x13 inch baking dish with butter. Add bite size chunks of English Muffins, apple onion mixture, and shredded white cheddar cheese in the casserole dish.
- Pour the egg mixture in the casserole dish. Cover the casserole dish with a plastic wrap and refrigerate overnight for at least 8-9 hours.
- Remove the pan from the fridge. Set it out at room temperature for at least 30-minutes. Meanwhile Preheat oven to 350 degrees F.
- Remove the plastic wrap from the top of the casserole and replace it with an aluminium foil.
- Bake in a preheated oven for 40-50 minutes. Remove the foil and bake for another 10-15 minutes until the top is browned.
- Garnish with chopped parsley and serve right away.
