St. Patrick's Day Wafer Cookies Treats are an easy and fun recipe, which you can make in just half an hour. This tasty treat is chocolaty, crunchy, Minty and just perfect for St. Patty's Day.

St. Patrick's Day might be an Irish festival, but we are super excited about it. Part of the reason behind this is the wonderful green treats and recipes for St. Patrick's Day. Mint Chocolate Wafer Cookies are just delightful. You can have it with milk and you'll love the sweet after flavor of mint and chocolate. I think Mint and Chocolate are the best combinations. Also, I have used Chocolate Wafer Cookies for this recipe, so you can imagine the burst of chocolate I get in my mouth with each bite!

I just love the color green. I know many of you don't. But I think Green is so peaceful and also so calming, that I would love to have a green treat on my plate every day. Well, for St. Patrick's Day I thought of making some quick no-bake desserts and this is the recipe that I thought might be fun to make. And this turned out to be so awesome. You can make these treats in like no time at all and they stay fresh for such a long time. My kids loved it and I even shared it with my neighbor!

Mint Chocolate Wafer Cookies tastes yummy. If you do not have mint extract at home, you can skip it. However, I strongly recommend that you don't. Mint and Chocolate are a true match made in heaven and this you'll realize with a bite of this cookie treat. Also, I think Mint just seems right with the green food color!

Another wonderful idea to make these cookies even more exciting would be to use Pistachio extract. Pistachio extract also gives a gorgeous green color and also gives a pleasing nutty flavor to your recipe.

Wafer Treats are quickly turning out to be my favorite go-to recipe when I want to make something quick. This really takes no time and turns out to be so good. Also, these are not like Fudges or Truffles that need freezing overnight. You could just pop these in the fridge for like 15 minutes and they will set really well.

However, you should although never try to freeze these or leave it in the Fridge for like more than an hour. Because this might get the lower layer stuck on your plate. You could also use a parchment paper to line the tray and then place your Wafers.

If you are going to a St. Patrick's Day party, these would be the perfect treats that everyone will love. They are perfectly green, chocolaty, minty and also a quick bite recipe, which you can make in no time and carry with you.

How to Make St. Patrick's Day Wafer Treats?

These wafer treats are actually really easy to make.

  • All you need is some wafers. You could use any flavored wafers. I have used Chocolate ones.
  • Meanwhile, you can melt some White Chocolate and then throw in a drop of green food color along with a drop of mint extract. You can give more food color if you like. Also, keep in mind that food color makes Chocolate lumpy so you need to coat the wafers with the Chocolate melt really quickly or else, you won't be able to do it.
  • Once you coat it well, you can just plate it and decorate it with sprinkles. You can freeze this for half an hour or 15 minutes and it'll be done.

  • First, take some White chocolate melt and throw in a drop of green food color & mint extract in it.

  • Coat your wafers with green chocolate melt.

  • Plate it well and repeat the same process for all the other wafer cookies.

  • Decorate your Wafer Cookies with Sprinkles.

  • 8 qt Wafer Cookies

  • First, take some White chocolate melt and throw in a drop of green food color in it.
  • Coat your wafer cookies with green chocolate melt.
  • Plate it well and repeat the same process for all the other wafer cookies.

  • Your St. Patrick's Day Wafer Treats are ready.
