I couldn't really think of a better way to describe my stuffed bell peppers.
As I took the first bite, it felt like I have entire Asia on my palate. Just like this Spicy Ramen Noodles Stir Fry with Vegetables and this 10-min Chili Garlic Udon Noodles.
Yes! friends it was that good. The crusty cheesy Mozzarella layer on the top with the sweet, spicy, and saucy lo-mein noodle layer beneath it all enclosed in a large firm pepper felt incredible, exotic, and something that I would want more and more of.

Stuffed Peppers are a really popular recipe.
I am sure you must have seen many variations of this recipe before you landed on my blog. Honestly, guys, I have never tried making this.
Today, was my first. And, I am really glad it turned out so good. Earlier, I have had it. My mom made it.
She would stuff it with some cooked veggies and some tofu. She has even got a stuffed tomato recipe which I will share with y'all later.

However, I wanted to make something new. I didn't want that same old veggie stuffing. I mean what's the fun about that? Nothing right? It's just sauteeing veggies and adding them to your pepper.
So, I decided to add lo-mein noodles. I realized that it would give a nice little Asian touch to my peppers while the Cheesy layer on top would make it so Americanised.
Therefore, with a little scare in my heart wondering how it would turn out and a little excitement in my mind, I proceed to make this recipe. Do I sound like a novel writer? You should read on because you will laugh at what happened at last. Don't worry! The recipe turned out great. But it's just how I reacted to it.

Why Should you Make this recipe?
You should make this because it's totally unique.
Until now you must have stuffed peppers with rice or quinoa or everything else. But, when you add your favorite lo-mein noodles you make it something else.
It has got that snacky touch along with that fabulously filling feel to it.
The Noodles make it Asian but the Mozzarella Cheese crust on top gives it a typical American touch.
You can have it as an appetizer or as a lunch or dinner recipe.
I think you should definitely make it because this will be a way of creating something really unique and surprising your guests with it.

Ingredients
- Bell Peppers
- Vegetable Oil
- Mozzarella Cheese shredded
Lo-Mein Noodles
- Ramen
- Veggies (Carrot, Bell Pepper, Garlic, Sweet Corn) chopped
Lo-Mein Sauce
- Dark Soy Sauce
- Light Soy Sauce
- Mirin
- Brown Sugar
- Sesame Oil

Instructions
Grab some fresh, firm, and large peppers. Yay! a big round of applause for the king of today's recipe! Seriously? There are no kings these days. Why would I call my peppers "king"? Well, if not king then probably the superstar of our today's recipe.
I have used green ones because they were the only ones I had with me. But, feel free to add the colorful ones. I can imagine how gorgeous they would look.
We start with chopping the crown of the peppers. Don't feel sad for them. I have got an idea where I'm gonna use them as well. So take off the crown and clean the inside of the peppers. Brush oil on the skin of peppers and pop it in the oven at full power for 5-minutes.
In the meantime, use the cut-out crown of the peppers and chop them out in small dices eliminating the center. See, didn't I tell you that I'm gonna use them.
Now, grab two baby carrots and chop them in the shape of small little cubes. Grab 3-4 garlic and chop them as well. Well, these will go into making the lo-mein noodles. We'll take them for a quick spin on the pan so that they are well cooked.

Once your lo-mein is ready it's just stuffing all that goodness of the noodles right into your peppers.
Yes, friends, it's that easy. So, basically, all that you have to do is make lo-mein noodles at home. Cut out the crown of your bell peppers.
Pop them in the oven for 5-minutes and then stuff them with your lo-mein noodles. Could there be any recipe easier than this?

Lastly, we need to top it off with some shredded mozzarella cheese. Do you know what I think? I think that every good recipe in this world comes to an end with some Mozzarella Cheese.
And here we have our green, firm peppers who are waiting for some of that mozzarella goodness. Let's cover the top with as much cheese as we want! No Judgement zone ahead!
So, wish them good luck and pop them in the oven so that they get baked for you. You need to pre-heat your oven at 350F or 180C and then place them in the oven.
Once they are done you need to give them some time. Let them come down to room temperature. Don't be like me. I got so excited looking at them that I wanted to pick one and show it to my Instagram fans. But, that didn't go well. It was so hot that I sort of burnt my hand in the process. Not literally burnt but yes, it was hot. So, Better don't try that.

Serve it to your family or enjoy it all by yourself. Do you know what I did? I made them then had my lunch and in the meantime, I gave them some time to cool down. After my lunch, though I was full I still grabbed one and had it. What do I do? They were looking at me with those cute little appetizing eyes?
For about 30-seconds my mouth was full and If I could show you my face then you'd be laughing so damn hard. I didn't want to talk, I didn't want to do anything but just close my eyes and taste every bit of noodles, corn, peppers, and cheese. Then I showed it to my husband. He was really happy to see it. But you won't believe what happened next. I actually asked him, "Do you mind if I have your part?"
I mean I never do that. I love making things for my family. But, today was something different. Even after having a plate full of lunch, one large stuffed pepper, I was ready to have one more or two more or probably all of that peppery, cheesy goodness! Crazy me!

Lo-Mein Stuffed Bell Peppers
INGREDIENTS
- 4 Large Bell Peppers
- 1 tablespoon Vegetable Oil
- 1 Cup Mozzarella Cheese shredded
Lo-Mein Noodles
- 2 pack Ramen
- 1 Cup Veggies (Carrot, Bell Pepper, Garlic, Sweet Corn) chopped
Lo-Mein Sauce
- ½ teaspoon Dark Soy Sauce
- ½ teaspoon Light Soy Sauce
- ½ teaspoon Mirin
- ½ teaspoon Brown Sugar
- ½ teaspoon Sesame Oil
INSTRUCTIONS
Prepping the Bell Pepper
- Cut the crown of the bell pepper. De-seed it and remove the veins. Brush with oil on all sides. Put in a large baking tray and bake for 5-minutes at full power. After 5-minutes get them out and allow them to cool down.
Lo-Mein Noodles
- Cook Ramen as per package instructions along with chopped veggies.
- Make Lo-Mein Sauce and pour in the ramen. Stir well and keep aside.
Stuffing the Bell Pepper
- Cool Down the noodles and stuff it in the bell peppers. Press it firmly with your finger and fill in tightly. Top with Mozzarella Cheese.
- Bake at 180C OR 350F for 6-8 minutes.

- Stuff the bell peppers with as much lo-mein as possible. And, push it in. When you push it in then they will stand erect. Or else they might fall on the baking tray.
