Hey friends, so Kiwis are in the market and it feels like Summers already. I know it is still cold in many parts of the world, but there is something about a freshly sliced Kiwi. It reminds you of the summers right! The bright green color with speckles of black seeds!
Growing up we never really enjoyed Kiwis so much. However, when my boys were growing up, I used to buy Kiwis often. I used to peel it out and scoop out the flesh and give it to them as a healthy snack or sometimes make a smoothie out of it.
But, more often than not, we rarely used Kiwis. However, gradually I started falling for this recipe. Especially the brilliant use of this in healthy-ish desserts! It's just so good!

I like to use Kiwis in my Fruit Pizzas or a fruit salad. It just pops the color so well and is excellent in terms of food photography!
Healthy Kiwi Chia Pudding

Kiwis are a great fruit to begin your day with. Kiwis are rich in Vitamin C, even more than Oranges. Also, it is rich in Antioxidants, High in Iron & Potassium, even more than Bananas. Kiwis are a great workout snack. Especially a great Pre-Workout Snack. Or enjoy it as a shake or juice post-workout. Have you tried my Tropical Chia Banana Smoothie?
On the other hand, Chia seeds are equally nutritious and healthy. From reducing heart risks to increasing the amount of fiber and omega-3 in the diet, these super grains are just the perfect grains for a quick dessert. These soak up milk or cream or here Coconut Milk. You can easily mix it with any fruits you love and enjoy it in the form of a healthy dessert.

Ingredients needed to make Kiwi Chia Pudding
- Freshly chopped Kiwis
- Chia seeds
- Coconut Milk
- Honey
- Vanilla Extract
How to make Kiwi Chia Pudding
Soaking the Chia Seeds - First, Soak the Chia Seeds in coconut milk, along with Honey and Vanilla Extract, for 1-2 hours or overnight. This is very important as only if you soak the Chia Seeds, it will soak in all the liquid and become edible.

Layer - Now, it's just basic layering. So, make a lower layer of Kiwis. Of course, peel and chop the Kiwis and then layer it at the bottom of the glass. Top with the Chia-Coconut Milk mixture. Top with Plant-based Heavy cream and some chopped Kiwis. Serve immediately or refrigerate until serving.
To make this Kiwi Chia Pudding ahead of time, you can mix the Chia seeds with Coconut Mik, Honey, and Vanilla Extract and keep this covered in the refrigerator for 2-3 days, so that it doesn't dry out.

When you are serving, just layer with freshly chopped fruits and serve. Using Cream is totally optional

Healthy Kiwi Chia Pudding
INGREDIENTS
- 4 fresh Kiwis Peeled & chopped
- ¼ cup Chia Seeds Washed and rinsed
- 1 cup Coconut Milk
- ½ cup Honey
- 1 teaspoon Pure Vanilla Extract
- 1 tablespoon Plant Based Heavy Cream optional
INSTRUCTIONS
- Wash and rinse the Chia Seed. Soak them in a bowl with coconut milk, honey, and vanilla extract. Cover and refrigerate for 1 hour or overnight.
- Layer a glass with freshly chopped Kiwis, followed by a layer of the Chia Pudding, followed by some Plant Based Heavy Cream (if you're using) and finally some freshly chopped Kiwis. Serve

- You can top it with fresh Blueberries or shredded Coconut.
- Refrigerate until served. This is best served chilled!
