Hot Chocolate Cookies are the most decadent cookies for the season. These are made with dark cocoa powder, chocolate chips, and Marshmallows. It's as delicious and a creamy mug of hot chocolate but just in the form of a cookie. These are chewy on the inside and extremely chocolaty and delicious!

Hey friends! So, today I'll be sharing with y'all my favorite holiday cookie recipe - Hot Chocolate Cookies. These hot chocolate cookies are the most decadent and indulging cookies of the season. These cookies are made with dark cocoa powder, milk, unsweetened chocolate chips, marshmallows, and sugar. Basically, it's everything you put in a hot chocolate, plus the flour, cornstarch, and baking soda so that you make a delicious cookie out of it and not your same hot chocolate.! Isn't it just the best idea ever and trust me these cookies are seriously the best!!!!

I made a batch of these cookies last night and by today noon they were over. Seriously my kids cannot get enough of these cookies. Today they've asked me to make these again! I can't blame them though! I too am a sucker for these cookies. I loved these so so so much. I am going to make them again today and save some of the cookie dough to make later for my friends and neighbors. The dark and chocolaty flavor is just the best. Also, I love the flavor of Marshmallow in this cookie. It gets slightly roasted after it gets baked and tastes just so darn good! 🙂

It tastes just like Hot Chocolate. Equally Moist and Chewy with a perfect bite of Chocolate Chips and Marshmallows to it. Seriously, even if you feel that you do not love chocolate cookies, you should try these. They are beyond delicious.

Some important tips to make the best Hot Chocolate Cookies

  • I highly recommend you use Dutch Processed Cocoa powder for better flavors
  • I have chopped a giant Marshmallow into small pieces and then stuffed it in the center of my cookies. You can use the Mini Marshmallows as well. Also, do not stuff the cookies with a lot of Marshmallows as that will spread the cookies while they get baked.
  • After you've made the cookie dough, chill the cookie dough in the freezer for 20 minutes or refrigerate for 1 hour.
  • After you've made the cookie dough, roll small cookie dough balls, flatten them out a little, and stuff in each cookie with a marshmallow bit. This is important so that the cookies do not spread a lot in the oven. See the video below for a visual.
  • Before you bake the cookies freeze them for 20 minutes or refrigerate for 1 hour and then pop it in the oven.
  • The longer the cookies stay in the freezer, the shorter are the chances of them spreading in the oven.
  • Do not use a lot of milk to make the cookie dough. The dough should be considerably thick. See the video for a visual.

How to make ahead Hot Chocolate Cookies?

  • You can store these cookies on the counter at room temperature for 3-4 days.
  • You can roll the cookie dough balls, flatten it out, stuff with the chocolate chips and Marshmallow, and freeze the cookies by wrapping them individually with aluminum foil and then store them in a freezer friendly bag. These will stay good for about 1 week.
  • Before baking, do not thaw. Just pop these cookies directly in the oven and bake for 3 extra minutes.

INGREDIENTS

  • 1 cup AP Flour
  • ¼ cup Dutch Processed Cocoa Powder
  • ½ teaspoon Baking Soda
  • 1 tablespoon Cornstarch
  • 1 large egg
  • 1 pinch Salt
  • 1 stick Softened Unsalted Butter
  • ½ cup Granulated sugar
  • 1 teaspoon Pure Vanilla Extract
  • 2 tablespoon whole milk can replace with 2% milk or Almond Milk
  • ½ cup Unsweetened Chocolate chips more for topping
  • Marshmallows for topping
  • Chocolate syrup to decorate (Optional)

INSTRUCTIONS

  • To make the hot chocolate cookie dough, take the flour, baking soda, cocoa powder, and cornstarch in a bowl. Mix well. Now, add the softened butter, granulated sugar, vanilla extract, egg, milk, and chocolate chips to the batter and combine using a wooden spoon to make a thick cookie dough.     Cover and freeze the cookie dough for 20 minutes or refrigerate for 1 hour.
    Meanwhile, preheat the oven to 350F or 180C

  • After the cookie dough is chilled, roll the cookie dough balls. Press it slightly to flatten it out. Stuff a chopped marshmallows in the center of the cookie. Stuff more chocolate chips around it. Pop it in the freezer for 20 more minutes and then bake for 10 minutes

  • After the cookies have been baked, allow them to stay in the same hot baking dish for 5 minutes on the counter, so that they harden a little. Drizzle with some chocolate syrup or melt some dark melting wafers in the oven and drizzle over your baked cookies. Allow the chocolate drizzle to harden for some time and then serve!

  • The cookie dough should be dry. Just add the mentioned amount of milk and do not freak out if it's too dry. The cookies will turn out just fine. (see the video for a visual)
