How to make Duchess Potatoes easily?

- Boil the potatoes and cook for 20 min until fork tender. Drain them in a colander.
- Add them back to the pot over low heat and allow them to release the steam for about a minute or so. This will also get rid of the moisture from the Potatoes
- Now turn off the heat and mash the potatoes
- Next add butter, egg yolks, salt, cracked pepper, nutmeg, and heavy cream.
- Combine everything and continue mashing the potatoes until everything gets well incorporated and you have a gluey consistency which is kind of like the dough of a choux pastry.
- Add the mashed potato to a piping bag with large star point.

Duchess Potatoes recipe
INGREDIENTS
- 2 lbs Yukon Gold Potatoes
- 4 tbsp unsalted butter, softened (½ stick)
- 2 egg yolks
- ½ cup heavy cream
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- ¼ teaspoon ground nutmeg
- 2 tablespoon melted butter unsalted (for brushing)
- smoked paprika for ganrish
- fresh Parsley finely chopped (for garnish)
INSTRUCTIONS
- Place the peeled and chopped potatoes in a large pot of cold, salted water.Bring to a boil over medium-high heat and cook for about 20 minutes or until fork-tender.Drain the potatoes in a colander.
- Return the drained potatoes to the pot over low heat.Let them sit for about a minute to allow excess moisture to evaporate.Turn off the heat and mash the potatoes until smooth and lump-free.
- Add the softened butter, egg yolks, salt, cracked pepper, nutmeg, and heavy cream.Stir everything together and continue mashing until fully combined. The mixture should have a smooth, dough-like consistency similar to choux pastry.
- Transfer the mashed potatoes to a piping bag fitted with a large star tip.Pipe swirls of the potato mixture onto a parchment-lined baking sheet, spacing them slightly apart.
- Gently brush the tops of the potatoes with melted butter.Bake in a preheated oven at 425°F (220°C) for 20 minutes, or until golden brown and slightly crispy on top.
