Duchess Potato is a fancy mashed potato recipe which is a perfect holiday side dish. Its also very easy to make and everyone loves it as a great side dish for the holidays.
Place the peeled and chopped potatoes in a large pot of cold, salted water.Bring to a boil over medium-high heat and cook for about 20 minutes or until fork-tender.Drain the potatoes in a colander.
Return the drained potatoes to the pot over low heat.Let them sit for about a minute to allow excess moisture to evaporate.Turn off the heat and mash the potatoes until smooth and lump-free.
Add the softened butter, egg yolks, salt, cracked pepper, nutmeg, and heavy cream.Stir everything together and continue mashing until fully combined. The mixture should have a smooth, dough-like consistency similar to choux pastry.
Transfer the mashed potatoes to a piping bag fitted with a large star tip.Pipe swirls of the potato mixture onto a parchment-lined baking sheet, spacing them slightly apart.
Gently brush the tops of the potatoes with melted butter.Bake in a preheated oven at 425°F (220°C) for 20 minutes, or until golden brown and slightly crispy on top.
Sprinkle the baked duchess potatoes with smoked paprika and freshly chopped parsley for a beautiful finish.Serve warm as an elegant side dish to your favorite main course.
