How to Make Coconut Shrimps in Air Fryer
Here is a quick guide on how to make Coconut crusted shrimp in the air fryer.
Step 1: Pat Dry Shrimps
Use a paper towel to pat dry shrimps. If you are using frozen shrimps then make sure you pat dry completely.
Step 2: Make Flour Mixture
In a shallow plate combine all-purpose flour with Salt and Pepper. Keep it aside.
Step 3: Make Beaten Egg Mixture
In a medium-size bowl combine beaten egg with coconut milk. Use a spoon to whisk it evenly until smooth.
Step 4: Make Panko Coconut Mixture
In a bowl, Combine Shredded Coconut with Panko breadcrumbs, Mix it with a spoon, and keep it aside.

Step 5: Coat Shrimps
Coat shrimps in the flour mixture, then in the egg mixture, and finally in the Panko coconut mixture. You cannot change the order. I use an acronym - "FBP" meaning Flour, Beaten Eggs, and Panko Coconut mixture. This helps me remember the order.

Step 6: Air Fry
Finally, place them in your Air fryer basket. Spray oil on shrimp. And Air fry for 10-12 minutes at 400 degrees F or 200 degrees C.
Key Tips for Perfect Coconut Shrimp

- Panko Breadcrumbs - Panko is made from crustless bread and therefore stays crispy for a long time compared to regular breadcrumbs.
- Spray Oil - I like to pour my olive oil.Avocado Oil into old glass spray bottles. Do not use Non-stick cooking spray in the air fryer basket as it will damage the Teflon coating.
- Overcrowd - Make sure you leave some gap between each shrimp so that the "air" can flow and fry your shrimps.
- Shake off excess - While dredging shrimps in the mixture make sure you shake off any excess.
- flip - You can flip at the 8-minute mark and cook the other side for another 3-4 minutes.
What Kind of Oil Should I Spray?
The thing that we should remember is that we should spray oil onto food and not in the air fryer basket. Some food items do not oil such as Air fryer Chicken Breasts or Chicken Parmesan or Cauliflower Wings
But for some food items, (Parmesan Zucchini Fries in Air Fryer or Garlic Parmesan Potato Wedges in Air Fryer you do need to spray oil. BUT, on your food.
When spraying Oil on food for air frying, make sure you use either Olive Oil or Avocado Oil.
This is because you must only use oil with high smoke points for your air fryer. Olive Oil has a smoke point of 405 degrees F and Avocado oil has a smoke point of 520 degrees F.
How Long do you air fry coconut shrimp?

Air frying coconut shrimps or any other breaded shrimps is easy. All it takes is a few attempts to actually master it.
Typically it takes 10-12 minutes to air fry breaded shrimps at 400 degrees F OR 200 degrees C. But, you can definitely increase or decrease the cooking time depending on your air fryer. I used an air fryer with 1400 watts so it took me 10-12 minutes.
But, in case your Air Fryer is 1700 watts then it will take way less time. If you are using an air fryer with 800 watts then it would take you much longer than 10-minutes to air fry coconut shrimps.
So, make sure you read your instructions manual. Also, keep checking at regular intervals to prevent your shrimps from overcooking.
What to Serve with Coconut Shrimp
Coconut Shrimp is generally served with Thai Sweet Chili Sauce. But, I like to serve it with my Pineapple Chili Sauce. Fresh Pineapples or Canned Pineapples along with bird eye chilies, lemon juice, salt, cayenne pepper, and sugar are actually blended in a high-speed blending jar and then simmered in pineapple juice for some time.
Coconut Shrimps and Pineapple Chili Sauce are actually a great combination. And, if you ask me what pairs well with coconut shrimps I have to say - Pineapple Chili Sauce.
How to NOT Overcook Shrimps?
Overcooked Shrimps becomes "rubbery" and chewy. But, there are ways to ensure that you do not overcook your shrimps.
The best way to find out if your shrimp is cooked is to simply look at it. It should be opaque white with a few bright red and pink accents.
Don't go by the shape. Many people say that it should turn into a "C" and not an "O". But, it is all very confusing. The best way to ensure cooked shrimp is to simply take a good look at it.
Storage Instructions
Air-fried Coconut Shrimps freezes well for up to 2-months. But make sure you keep them in a ziplock bag or an air-tight container. You can reheat them in the oven for 10-minutes at 350 degrees F or 180 degrees C.
Can I Make this with Frozen Shrimps?
Of course, you can use Frozen shrimps to make this recipe. Frozen shrimps need to be thawed before use. Also, frozen shrimps will hold the coating better than fresh shrimps.
