Carrot Cake Chocolate Chip Cookies

I can't believe it's Easter in the next 12 days.

Today, I was looking to make something for you guys with Carrots. Since it's the Spring season and there are plenty of Carrots in my garden ( yes! I love gardening too 🙂 ), I thought of making a special kind of comfort cookie.

The idea for this Carrot Cake Chocolate Chip Cookies came from the thought of mixing two of my all-time favorite recipes - Carrot cake and Chocolate Chips Cookies. At this time guys, when things seem to fall apart, it's very important to have faith and for that, you need a positive mind. I strongly believe that sometimes it just perfect to escape reality and live in that happy place of yours. We all have memories attached with food.

Chocolate Chips Cookies and Carrot Cake both have endless happy memories for me. From baking them on festive occasions to birthday parties, it just automatically makes me happy.

So, I thought, enough with everything, today let me give this recipe a try. And let me tell you I was more than happy with the result. It came out so gorgeous and so yummy, that I would definitely recommend you to make these babies.

I know you might think that getting ingredients at this kind of time will be difficult.

Don't worry. These cookies do not need many ingredients and are totally worth the effort!

How to make Carrot Cake Chocolate Chip Cookies?

First, make your usual Chocolate Chips Cookie dough. First, cream your brown sugar with Oil and to it eggs and vanilla.

Next, slowly add the flour along with baking soda and baking powder into the mixture and fold it with a spoon. Add a few chocolate chips and 1/2 cup of grated carrots to it.

Add a pinch of ground Cinnamon and ground Nutmeg. Also, add a teaspoon of Milk to it. Mix everything until you get soft cookie dough.

Your cookie dough should not be too lumpy and moist. If it's like that, add some flour, until you have smooth and soft cookie dough.

You can also add some chopped walnuts and raisins into your cookie dough. I wanted to add those but didn't have them at home so I skipped those.

Also, if you see that your cookie dough is too moist, refrigerate it for an hour before you use it.

Bake your Carrot Cake Chocolate Chip Cookies for 12 minutes at 360F.

Decorate them with cream cheese frosting and grated carrots.

INGREDIENTS

  • 1 Cup Brown Sugar
  • 1 Cup Unsalted Butter Melted and at room temperature
  • 2 large Egg
  • 1 Tablespoon Vanilla Essence
  • 2 Cup all-purpose flour
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Baking Powder
  • ¼ Cup Chocolate Chips
  • ½ Cup Grated Carrots
  • 1 Pinch Ground Cinnamon
  • 1 Pinch Ground Nutmeg
  • 1 Tablespoon Milk

INSTRUCTIONS

  • preheat oven to 350 degrees F
  • First in a mixing bowl cream the Butter and Sugar until smooth and creamy. To this mixture add eggs and vanilla essence. Whisk well until combined
  • Next, sieve the flour along with baking soda and baking powder into the wet mixture and fold it with a spoon.
  • Add in the chocolate chips, grated carrots, ground cinnamon, ground nutmeg, and milk. Mix everything well using a spoon and make your cookie dough
  • Bake your cookies at 360F for 12 minutes or until they start to get brown from the sides.
