Blueberry Pie Cups with Meringue
Hello guys! Happy Saturday to you! As promised, I am back with another interesting baking project for the weekend. Since this is the July 4th weekend and Blueberries is my latest obsession, I've been dishing out some crazy good blueberry recipes all along - be it the American flag fruit pizza or Berry Lasagna or Blueberry Crumb Cake or Lemon Blueberry Muffins or Classic Blueberry Muffins!
Today, I thought of making everyone's favorite - Blueberry Pie but in the form of cups that I have topped with some freshly homemade sweet and stiff Meringue. This is such an amazing recipe with Blueberries. I was just deciding on the perfect recipe for the weekend with blueberries and I happened to make this by chance.
But you guys, I am so in love with the recipe. It's so amazing and unique. I have never made anything like this before and trust me, I loved every bite of this recipe. 🙂 Seriously, it's really very good.

Tastewise these Blueberry Pie Cups are just roll your eyes back good. They are moist and juicy. There is a sweet and delicious blueberry pie filling which just makes it so delicious. The outer cookie cup is crusty and buttery!
How to make Blueberry Pie Cups with Meringue
As you might have guessed there are 3 major steps in this recipe.
1st step - Making the Cookie Cups
To make the cookie cups, combine butter and sugar along with flour, baking soda, cornflour, eggs, and vanilla. Mix everything until you get a soft cookie dough ready.
Grease the muffin tin generously and drop a cookie dough ball into it. Press the center with your thumb and the edges with your forefingers to make a cup.
Bake these cookie cups for 10 minutes at 350F or 200C.
After they are baked, press the center with your thumb or a round bottom spoon to make a hole in these cups.
2nd Step - Making the Blueberry Pie filling
In a pan take some Blueberries (fresh or frozen). Add sugar, cornstarch, Blueberry Jam, and lemon juice to it and cook over low flame for 1 minute until it thickens.
Cool it down and spoon it into your cookie cups.
Fill the cookie cups completely with this pie filling. They might overflow right now, but don't worry, pretty soon when you'll bake them, it'll soak it all the moisture and only the blueberries will remain on the top. 🙂
After this bake your Blueberry Pie Cups for another 3-4 minutes at 350F or 200C.
Once they get baked, get it out fo the oven, cool it down completely before you do the frosting with Meringue.
3rd Step - Meringue Frosting
I have used Meringue frosting for this recipe. You can use American Buttercream Frosting or Swiss Buttercream Frosting or Cream Cheese Frosting or Mascarpone Cheese Frosting or Heavy Whipping Cream Frosting over your Blueberry Pie Cups!
To make Meringue, beat Egg whites over low speed for 1 minute. Add the sugar 1 teaspoon at a time and beat at high speed for at least 4-5 more minutes or until you get stiff peaks.
Take the Meringue in a piping bag and do the frosting over cooled Blueberry Pie Cups.
Broil these Blueberry pie cups for 15-20 seconds.
If you are using any other kind of frosting you don't need to broil.
So, that's how you make these cute little Blueberry Pie Cups. It's such an easy recipe but is so tasty and delicious. These taste just like Blueberry Pies, but they look so different and cute as well.
How to store these Blueberry Pie Cups
You can store this in the refrigerator for 2-3 days. Before having it you can heat it in the oven at 350F for 2-3 minutes.

Blueberry Pie Cups with Meringue
INGREDIENTS
Sugar Cookie Cups
- ¼ Cup Salted Butter melted
- ½ Cup Light Brown Sugar
- ½ teaspoon Vanilla Essence
- 1 tablespoon Cornstarch
- 1 Cup AP FLour
- ½ teaspoon Baking Soda
- 1 whole Egg
- 2 tablespoon Milk
Blueberry Pie filling
- 1 cup Blueberries
- ½ Cup Sugar
- 2 tablespoon Lemon Juice
- 1 tablespoon Cornflour
Meringue
- 1 whole Egg white at room temperature
- 2 tablespoon granulated sugar
- 3-4 springs mint leaves
INSTRUCTIONS
Sugar cookie cups
- Preheat the oven to 350F or 200C and grease a muffin tin with butter or oil
- In a mixing bowl add all the ingredients - sugar, butter, flour, baking soda, egg, cornstarch, vanilla, and milk. Combine everything to make a soft cookie dough.
- Throw a ball of cookie dough in the greased muffin tin. Press the center and the edges with your thumb to make a cup.
- Bake at 350F or 200C for 10 minutes.
- After 10 minutes get it out and press the center with your thumb to make holes.
Making the Blueberry Pie Filling
- In a pan over low flame combine Blueberries along with sugar, lemon juice, and cornstarch. Mix until it thickens and then spoon the filling into your sugar cookie cups.
- Bake these Blueberry Pie Cups at 350F or 200C for 3-4 minutes.
Making the Meringue
- Beat egg whites at high speed for 4-5 minutes. Keep adding the sugar in parts and beat until you have stiff peaks formed.
- Do the frosting with the meringue
- Decorate with Mint leaves and Blueberries.
