INSTRUCTIONS
In a microwave-safe mixing bowl, combine roughly chopped dark chocolate bar and coconut oil. Microwave at 30-second increments stirring frequently until smooth and lump-free. Set aside.
In a large mixing bowl, combine cornstarch, cacao powder, and coconut milk. Whisk well until smooth, creamy, and lump-free.
In a saucepan over medium-high heat, combine coconut milk, vanilla protein, and melted dark chocolate.
Use a strainer to strain and add the cornstarch, cacao, and coconut milk mixture into the saucepan.
Use a balloon whisk to whisk the mixture in the saucepan for about 2-3 minutes or until rich, creamy, velvety, and thick. Turn off the heat.
Allow the pudding to cool down at room temperature.
Pour the pudding into your Glass Dessert Bowls.
Refrigerate until the pudding is completely set.
Serve with coconut cream or vegan cream cheese, berries of your choice, chopped hazelnuts or macadamia nuts, and a mint leaf. I like to sieve some cacao powder for that extra bitterness and chocolaty taste.
