INGREDIENTS

Cupcakes

  • 7.5 ounce chocolate cake mix devil’s Food cake mix
  • 2 ounce instant chocolate pudding dry
  • ⅓ cup coconut oil or canola oil
  • 2 large eggs
  • ⅓ cup milk
  • 4 ounces sour cream

Chocolate Buttercream Frosting

  • ½ cup unsalted butter
  • 2½ cup powdered sugar
  • 3 tablespoons natural unsweetened cocoa powder
  • 1½ tablespoon heavy cream or half-and-half
  • ½ teaspoon pure vanilla extract

  • 6 regular Oreos
  • 24 pieces Edible Candy Eyeballs

INSTRUCTIONS

Bake the cupcakes

  • Preheat oven to 325 degrees F. Arrange 2 muffin pans with cupcake liners.
  • Combine cake mix and chocolate pudding in a large bowl. Stir until combined. Next, mix in eggs, oil, and milk. Then stir in sour cream.
  • Pour the mixture into cupcake liners (about 3/4 of the way full). Bake for 20-25 minutes or until a toothpick comes out clean. Do not overbake.
  • Remove from oven and allow them to cool down on a wire cooling rack. Make sure the cupcakes are completely cooled before frosting.

Chocolate Buttercream Frosting

  • In a large bowl, beat butter using an electric hand mixer for 30 seconds.
  • Mix 1 cup of powdered sugar, cocoa, vanilla, and 1 tablespoon heavy cream using an electric mixer until smooth.
  • Add another cup of powdered sugar along with ½ tablespoon of heavy cream. Beat until smooth.
  • Repeat with the remaining sugar. Beat until smooth and creamy. Taste and add more vanilla and a pinch of salt if needed.

Oreo Bat Cupcakes

  • Frost the cooled cupcakes.
  • Break a regular Oreo cookie in half to make the wings and press them into the frosting.
  • Press edible candy eyeballs into the middle of the frosting to make the eyes.
