INSTRUCTIONS
Preheat oven to 375 degrees F. Grease a 12-cup muffin pan with non-stick cooking spray, and line it with cupcake liners.
Combine the ingredients for meatloaf in a large mixing bowl. Mix well until combined.
Divide and portion out the meatloaf mixture in muffin pan evenly all the way up to the top.
Bake for 15 minutes.
Make the meatloaf glaze in a bowl and use a paper towel to soak up grease on the meatloaf (if any)
Gently and Generously spoon the glaze over the mini meatloaf muffins.
Return to oven for an additional 10-15 minutes or until the meat is cooked through.
Garnish with freshly chopped parsley and serve with
mashed potatoes
and lightly
seasoned fresh veggies
