Whisk the Flour, Baking Soda, Salt, Semi Sweet Chocolate Chips and Cocoa Powder together.
Mix the milk, granulated sugar, vanilla extract and egg. Stir to combine all of this wet ingredient with the dry ingredients. Make a smooth and lump-free pancake batter.
Make Cream Cheese Frosting by beating softened Cream Cheese with granulated sugar and a drop of pink gel food color. Beat until it gets smooth and creamy.
Heat olive oil in a pan. As the oil shimmers, pour 1/4 cup of the batter in the center of the pan and allow it to spread around the edges on itself. Cook over medium-high heat. Flip when you see bubbles. Take it out on a separate plate and keep it aside.
Layer each pancake with cream cheese frosting.
Top with freshly chopped Strawberries, mint leaves, and some Heart-shaped Candy rocks if making for Valentine's Day and serve!
