INSTRUCTIONS
Split the Chicken Breast into butterflies and cut them up. Coat them with all the marinate ingredients. Place Chicken Breasts in a ziplock bag. Refrigerate for an hour or at least 30 min (it will soak up all the flavors). Add Flour, Salt and Pepper. Shake until chicken is completely coated.
In a pan heat some coconut oil. Once the oil shimmers add chicken breasts. Flip over and cook until both sides are evenly browned. Once done keep aside. You can use some lime juice or fish sauce (if youre fine with it) to deglaze the skillet and and scrape off all the tasty bits.
Pour some coconut oil in your crockpot. Add chicken breasts in one single layer. Pour Coconut milk, Coconut sugar, minced garlic, and lime juice. Toss lightly until chicken is coated in the sauce. Cover with glass lid and cook on high for 4 hours or on low for 8 hours. Add the Coconut cream in the last 30 min and stir and combine so that it doesn't thin out. Garnish and serve with freshly chopped parsley, a bit of lime zest and some more lime juice, and some shredded unsweetened coconut if desired.
