Chicken Ricotta Meatballs with a rich and creamy fire roasted tomato sauce takes only 20 minutes to make from scratch. Its a healthy high protein dinner recipe which the whole family can enjoy together.
Combine all the ingredients to make the Meatballs. Roll them into about 9-inch sized balls.
Heat Olive Oil in a skillet and add the meatballs. Cook for 3-4 minutes until they turn brown on all sides.
Fire Roast a Tomato & Bell Pepper until charred. Cool them down and chop them finely. Add them to a blender along with cloves of garlic, Italian Seasoning, Red pepper Flakes, Salt & Pepper. Blend to make a smooth sauce.
Add the sauce to the same skillet and simmer for 3-4 minutes. Gently add the Chicken Ricotta Meatballs back to the simmering sauce.
Garnish with freshly grated Mozzarella Cheese and chopped Parsley. Serve.
