No Bake Mini strawberry mousse cups, is simply the best Summer dessert recipe you can bake. Its so tasty. Creamy strawberry filling with a mousse like texture, these cupcakes are simply the best.
In a cup take 1 teaspoon gelatin and 4 teaspoon ice cold water. Let it set aside for 5-minutes.
First take a medium bowl with strawberry pie filling. Add sugar, lemon juice, desiccated coconut and heavy whipping cream. Mix well. Add the bloomed gelatin and mix well.
In a bowl, take some heavy whipping cream and beat it at medium to high speed until you see stiff peaks. Take out some for frosting later.
Mix the strawberry filling a scoop at a time in the bowl containing whipped cream. Fold it lightly. And your strawberry mousse is ready.
In a muffin tin lined with cupcake liners, pour 1 scoop of mousse batter and smoothen the top with an offset spatula.
Freeze these cups overnight.
To make the frosting take the leftover whipped cream that you had set aside. Add 1 drop of pink food color and whip for just 1 minute at low speed.
Use a piping bag to frost the cups on the top. And they are ready.
