Make the Dosa Batter by mixing in the Flour, Semolina, Yogurt, and Salt. Make a smooth & Lump-free batter. Allow it to rest for 30-40 minutes.
Heat the pan until it starts to smoke and then reduce the flame to medium. Brush with Oil and add the Dosa Batter. Pour in the center and allow it to spread out naturally.Use your spatula to spread the edges by going in a circular motion.
Drizzle some oil in the center of the Dosa and allow it to release the air bubbles and get brown from the sides.
Add the veggies and grated cheese and start making the fold. Start from one corner and make a fold to the center and then repeat that on the opposite side as well. Brush some oil at the intersection point and carefully turn the Dosa. Press your Spatula over the Dosa, so that it gets fried properly and take it out on a serving plate.
Serve your Dosa with Tomato Chutney or Coconut Chutney or any sauce of your choice.
