Buttery and Herby this Grandma's Sausage Herb Stuffing is one of the best Thanksgiving sides ever. Its super easy to make and is bursting with flavors of fresh herbs and loads of butter along with sweet and salty sausages.
16oz450gmFrench Breadcut into 1 inch cubes (possibly a day old)
1lbsItalian Sausagescasings removed
1stickUnsalted Butter
1cupChopped Celeryabout 3 stalks
1largeYellow Onionfinely chopped
1medium sizedCarrotfinely chopped
4clovesGarlicminced
1tablespoonFresh Thyme Chopped
1tablespoonFresh RosemaryChopped
1tablespoonFresh Sage Chopped
½cupFresh Parsleychopped
3cupsChicken Brothlow sodium
1cupDried Cranberriesoptional
1largeEggwhisked
¾teaspoonSaltor as per taste
½teaspoonGround Black Pepper
1tablespoonOlive Oil

INSTRUCTIONS
Preheat the oven to 350 F or 180 C and line a sheet pan with Parchment Paper.
Place the Bread cubes in a single layer in the sheet pan. Bake for about 10 minutes or until they dry out. Once the bread gets dry, transfer to a large bowl.
Heat olive oil in a saute pan. As the oil shimmers, add the Sausages. Break the Sausages and cook for about 5 - 10 minutes or until they are no longer Pink. Add this to the toasted Bread cubes.
In the same pan, melt a stick of butter. As the butter melts, add the chopped onions, chopped Celery and minced Garlic. Saute for 2 minutes. Add the herbs - Sage, Rosemary, Thyme and Parsley and toss to combine. Season with Salt and Pepper and cook for 10 minutes over low heat. Transfer to the large bowl.
Mix this with the chicken broth, dried cranberries and beaten egg. Toss to combine everything with the Bread mixture until the moisture is absorbed.
Pour this to a 9x12 inches baking dish. Bake for 30 -35 minutes or until it is browned on top. Serve this warm.
