Just like every other day, my morning began in confusion. As a Libra♎️ talking decisions is never easy. How can you choose between two favorable options!
God! How I wish I was a Capricorn or a Taurus who would exactly know what they want and go after that. So, I was really confused between the two recipes.
One was baked beans on toast and the second was this White Bean Quesadillas. I am so glad that I decided to make the second one. It goes without saying that very soon I am gonna be making the first one as well.
But, thank God! I decided to make the Quesadillas today! They were so good. Simply amazing. I am so much in love with Mexican Food. Starting from that creamy filling to the crunchy tortillas on the outside this is recipe is surely a winner. Just like these:

Buffalo Chickpea Quesadillas with Mexican Cheese Sauce
Generally, people make White Bean Quesadillas with Sour Cream or Non-Fat Greek Yogurt on the inside. But, just to avoid that extra sour taste I decided to add ranch dressing. Ranch Dressing brings in a creaminess to our Quesadillas and makes it so delicious.

🍲Ingredients You'll Need to Make White Bean Quesadillas:
- Cannellini Beans: Cannellini Beans is the best beans that can be used to make White Bean Quesadillas. It gives a beautiful nutty texture to our Quesadillas.
- Fresh Spinach - You can definitely use frozen spinach while making this. Make sure you thaw it out before using it. If you are new at this you can learn how to thaw Frozen Spinach here.
- Spices: Garlic Powder, Chili Powder, Ground Cumin, Salt. Chili Powder and Ground Cumin give that smokiness to the Quesadillas. While Garlic Powder gives that garlic-ky kick to the recipe.
- Shredded Sharp Cheddar Cheese: Cheddar Cheese brings a sharp and cheesy taste to these Quesadillas.
- Ranch Dressing: I love Hidden Valley Ranch Dressing. It is so creamy and so comforting. Just the sort of thing that you would need. However you can make your own as well.
- Tortillas: I used Flour Tortillas for this recipe.
🥘How To Make White Bean and Spinach Quesadillas?

- Season White Bean: I used Canned Cannelini Beans. Drain the water and keep it in a bowl. Into that add Salt, Garlic Powder, Chili Powder, and Ground Cumin. Stir well to Combine.
- Add Chopped Spinach: Into this add some chopped Spinach. I love baby spinach for this recipe for that beautiful taste. However, you can use whatever is available. Just keep in mind that if you are using frozen spinach then thaw it out before use.
- Add Cheddar Cheese: I just love Sharp Cheddar Cheese. So, just shred your Cheddar and add it to the mix. You can replace this with Monterey Jack or Pepper Jack Cheese.
- Add Ranch Dressing: Finally, add in some Ranch Dressing and mix it all nicely, Ranch Dressing will bring a beautiful creaminess to our Quesadillas.
- Divide the Mixture in Tortillas: Use warm tortillas and place the mixture in it. Fold it in half and then use a knife of a pizza cutter to cut it in half.
- Serve: Serve with some fresh cilantro along with Fresh Guacamole or Salsa. You can also make Grilled Corn Mango Salsa or Pineapple Salsa (Summer Favourite)!

Vegan White Bean Quesadillas
In this recipe, we've use ranch dressing. You can replace it with Coconut Cream or any Soy Based Sour Cream to make this vegan. Also you can use Vegan Cheese Blend in place instead of Mexican Cheese.
🧊 Storage Instructions
You can store the filling in an air-tight container such as a Tupperware. Then you can refrigerate the filling for up to 2-3 days.
Before making Quesadillas make sure you reheat them in the microwave for 1-2 minutes until completely warmed through.
Finally, just place them in flour tortillas, cook quesadillas and serve with Salsa.
🥡Make-Ahead Instructions
You can definitely Make this White Bean Quesadilla ahead of time. All you have to do is just prepare the filling and keep it stored in an air-tight container for 2-3 days.
When you want to eat your Quesadillas, just make sure you reheat this filling and warm your tortillas in the oven. Place the filling, toast it lightly in a preheated pan and enjoy with some Salsa or Guacamole.
🤤Replacements & Substitutions:
- Cheese: You can replace Cheddar Cheese with Monterey Jack or Pepper Jack Cheese or Colby Jack Cheese. You can also make it more Mexican by adding Shredded Mexican Cotija Cheese.
- Bring in More Heat: You can add more Heat to the Quesadillas. Just add some Chipotle Peppers in Adobo sauce and it will make it spicier. Or else just add 1 tablespoon of Chipotle hot Sauce while making the White Bean Spinach mixture,
- Salsa - If you don't have salsa don't fret it. Just use Enchilada Sauce in its place and you'll be good to go.
- Don't Like Spinach - No issues, you can replace spinach with a can of diced green chilies. Different texture but a good alternative.

White Bean Quesadillas with Baby Spinach
INGREDIENTS
- 1 15 oz can cannellini beans
- 1½ Cup Fresh Baby Spinach finely chopped (can use frozen spinach that has been thawed and drained)
- ¾ Teaspoon Chili Powder
- ¼ Teaspoon Ground Cumin
- ¼ Teaspoon Garlic Powder
- Salt to taste
- 4 Oz Shredded Sharp Cheddar Cheese or Cotija Cheese or Monterey Jack or Mexican Cheese blend or Colby Jack
- ½ Cup Ranch Dressing
- 4 8-inch Flour Tortillas
INSTRUCTIONS
- Season the Beans: Drain the beans and rinse thoroughly. Once drained, transfer them to a mixing bowl. Add chili powder, ground cumin, garlic powder, and salt. Stir to combine.
- Add Spinach: Add chopped spinach, ranch dressing, and shredded cheddar cheese to the beans and spices mixture. Stir to combine.
- Divide the Mixture: Divide the mixture evenly in each tortilla. Fold them in half.
- Cook the Quesadillas: Heat a skillet on medium-high heat. Cook one or two Quesadillas at a time until they get brown and crispy on the outside, while the cheese melts inside. (3-5 minutes on each side)Cut Quesadillas in half and serve with Chipotle Salsa or Simple Sour Cream or Guacamole.
