Vegan Sloppy Joe Stuffed Sweet Potatoes is one of the easiest ever dinner recipes. This extremely delicious and saucy Sloppy Joe Stuffed Sweet Potato is sweet, spicy, and tangy at the same time! The flavorful filling pairs excellently with the Sweet Potatoes and makes for a quick dinner recipe that gets ready in just 45 minutes from scratch.

This January I am trying to include as many Vegan recipes in my dinner as possible. This insanely easy and delicious Stuffed Sweet Potato recipe is a total winner. It's so easy to make and the flavors are to die for!

Sloppy Joe's is something which I love! Especially around Game Day, it's something I love to make for my kids and husband. This January, since I am trying to include as many Vegan recipes as possible in my diet, and I was craving Sloppy Joes so I tried this Vegan Alternative.

The best alternative to anything Ground beef is Lentil. Its got that same texture and is the perfect alternative.

Vegan Sloppy Joe Stuffed Sweet Potatoes with cilantro on top

Ingredients needed to make Vegan Sloppy Joe Stuffed Sweet Potatoes

  • 2 medium-sized Sweet Potatoes
  • 1 Cup Brown Lentil
  • 1 teaspoon Olive Oil
  • 1 medium-sized Red Onion (chopped)
  • 4 cloves Garlic (minced)
  • 1/2 medium Red or Green Bell Pepper (diced)
  • 1/2 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Paprika
  • 2 tablespoon Coconut Sugar
  • 1 15oz Tomato Sauce
  • 2 tablespoon Mustard sauce
  • 1 teaspoon Dark Soy Sauce
  • 1/2 teaspoon Cider Vinegar
  • 1 stick melted unsalted butter
  • Salt & Pepper to taste

How to make Vegan Sloppy Joe Stuffed Sweet Potatoes

Cook the Sweet Potatoes: Prick the Sweet Potatoes using a fork in several places. Place it on a high rack in the oven and microwave on high for about 12-14 minutes.

Cook the Lentil: Meanwhile, Take a saucepan with 2 cups of Water or Vegetable broth and bring it to a boil. As it comes to a boil, add the Lentil and simmer for 7-8 minutes uncovered. It should get thoroughly cooked but should not turn mushy!

Saute the Veggies: In the meantime, heat olive oil in a pan. As the oil shimmers, add the chopped onions, minced garlic, and chopped bell peppers. Saute over medium-high heat until they tenderize for 4-5 minutes.

Add the Spices: Season with Salt & Pepper. Add some ground cumin, chili powder, paprika, tomato sauce, mustard sauce, Soy Sauce, Cider Vinegar, Coconut Sugar. Stir to combine everything.

Now, add the cooked Lentil and stir until combined. Cook for 5-6 minutes until thoroughly heated through stirring occasionally.

Stuff the Sweet Potatoes: Finally, take the Sweet Potatoes out of the oven.

Cut open the sweet potatoes in half, lengthwise. Press open to make your sweet potato into a well. Use a fork to scoop out some of the flesh of the sweet potato.

Mix the remaining Sweet Potato flesh with the vegan sloppy joe filling. Stuff this in the well of the Sweet Potato.

Serve: Top with chopped Cilantro and Avocado Crema.

Tips to make this recipe:

Vegan Sloppy Joe Stuffed Sweet Potatoes on a black plate
  • Do not overcook the lentil. If you're using Brown Lentil or Black Lentil is should take about 10-12 minutes to get cooked.
  • Red lentil cooks extremely fast so it will cook in just 4-5 minutes
  • Green Lentil should take about 7-8 minutes to get cooked.
  • Remember to keep the lentil a little chunky and don't make it mushy.
  • If you can find Vegan Worcestershire sauce in the store then you can use it. I have used Dark Soy Sauce and Vinegar as a replacement for Worcestershire sauce.
  • After cooking the Sweet Potatoes in the oven, get them out and allow them to cool down to room temperature. Do not wash them or add water to them.

Other Possible Substitutions:

  • You can replace Soy Sauce & Vinegar with Vegan Worchestire Sauce
  • You can replace Brown Lentil with any lentil you like. Although the cooking time will vary.

Notes

  • I use Trader Joes Tomato Sauce. for this recipe which is just a basic Tomato Puree tossed with salt, pepper, and garlic powder.
  • I have used Soy Sauce & Cider Vinegar as a replacement for Worchester Sauce. You can use Vegan Worchestire Sauce if you can find it in the stores.
  • If you're using Green Lentils cook it for 18-20 minutes
  • If you're using Red lentil, cook it for 7-10 minutes.
