    Finally, it's the end of August. What a crazy year it was. Next Monday will be labor day. In a few days, kids are gonna get back to school. The schedule is gonna get tight. We are all gonna get busy. And, therefore I thought about making some quick protein-packed snack that is easy to carry and brimming with deliciousness.

    The best part is that you can store them for a very long period of time. Now packing lunch or snacks for kids is gonna be a breeze.

    Nuts - Any nut such as Pecan or Walnut or Cashews or Almonds can be used to make this. No nut to chop them as you are anyway going to pulse them in the food processor.

    Oats - I recommend old-fashioned oats for this recipe. Oats adds a chewy texture to our granola cups.

    Medjool Dates - Dates are rich in fiber and are naturally sweet. They help you get the mixture sticky.

    Nut Butter - Natural peanut butter is best suited for this recipe. You can replace it with cashew butter or almond butter.

    Maple Syrup - I like my granola cups sweet. Moreover, maple syrup helps cut out the bitterness of flaxseeds.

    Berries - Any berries that are available at home can be used for this recipe. Blueberries, blackberries, raspberries, strawberries, or cranberries can be used for this recipe.

    Pure Vanilla Extract - To make it fragrant and flavorful, I prefer adding some Pure Vanilla extract into the mix.

    Chocolate - Baking Chocolate Bars or Semi-Sweet Dark Chocolate Chips or both can be a part of this easy peasy No-bake Granola Cups.

    Shredded Coconut - Did you know that Coconut keeps your weight in check? Not, just that, Coconut Keeps your heart healthy. Therefore you cannot miss out on Coconut.

    Ground Cinnamon - You cannot underestimate the brilliant nutty taste of ground cinnamon. I bet you'll love the after-taste of ground cinnamon.

    Fine Sea Salt - Just a pinch of salt to get everything straightened out.

    How to make No Bake Granola Cups

    Step 1: Pulse

    Pulse all ingredients in a food processor until they come together and look sort of like they are sticking to each other.

    Step 2: Place in a Muffin tin

    Line a muffin tin with cupcake liners. Scoop out a portion of granola mixture from the food processor and place it in the muffin tin. Smoothen the top with the back of the spoon.

    Step 3: Freeze until set

    Freeze these granola cups until set. Serve once they come down to room temperature.

    Variations & Substitutions

    • Nuts - You can replace Almonds with Walnuts or Cashews
    • Flaxseeds - You can replace flax seeds with chia seeds or pepitas.
    • Quick Oats - Yes you can replace Old fashioned oats with quich oats. But, remember that quick oats might get mixed into the granola cups. For a chewy texture use Old Fashioned Oats.
    • Berries - Any berry that is available at home with you can be used for this recipe. You can use both fresh or frozen berries.
    • Nutmeg - You can also add a pinch of nutmeg to add a layer or nuttiness to this granola cups.

    Equipment

    • Freezer
    • Muffin tin

    Ingredients
      

    • 1 cup Old Fashioned Oats or Quick Oats
    • 1 Tsp Ground Cinnamon
    • ½ teaspoon Fine Sea Salt
    • 1 cup Maple Syrup
    • 1 cup Peanut Butter or Almond Butter or Cashew Butter
    • 1 teaspoon Pure Vanilla Extract
    • 1 cup Semi-Sweet Dark Chocolate Chips
    • 2 cups Mix-ins (any dried berries - Raisins, Dried Cranberries, nuts (walnuts, pecans, almonds, cashews), Medjool Dates, Seeds (Pepitas, Sunflower Seeds), Shredded Coconut

    Instructions
     

    • Pulse all the ingredients in a food processor until combined. Check to see if they form a lump together. If they do, they are done.
    • Line a muffin tin with parchment paper. Pour the granola filling in it. Press the top with the back of a spoon. Freeze these Granola Cups for 2 hours.
    • Once these cups are frozen, get them out. Remove the liner and serve them with fresh fruits and berries.

    Notes

    These Granola Cups can be kept at room temperature for several days. You can refrigerate these for up to 3-4 weeks and freeze them for 4 months.
    However, remember to wrap these Granola Cups individually with plastic wrap and then again with Aluminium foil and then store them. Do not store them all together all they will all stick together.
