The summer season is synonymous with corn. You see it everywhere. And, when you see so much of corn, you have got to include that in your recipes. Last week I had made this Black Bean and Corn Salad with lime dressing and it was SOO GOOD!
I mean I was a person who considers Salad, the least tasty food of all, was all praises for it. One of the reasons could be that I made it so I liked it. But, seriously folks, there was nothing to not like about it. It was so fresh, saw raw, and yet so tasty. Sometimes the only taste that one craves is the taste of freshness. All we want is that unpolished, uncooked, natural flavors of the veggies without any spices at all.

Today I will tell you guys how to make a healthy summer salad within 20-minutes. It will not take more than 20-minutes. Moreover, you will love the cilantro lime dressing. It has a typical fresh taste which you won't find anywhere else. It has got the freshness of cilantro, the creaminess of the yogurt, and the zesty freshness of lime.

So, Let's Make a Healthy Mexican Corn Salad with Cilantro Lime Dressing
The beauty of this salad lies in its veggies. An important thing to notice in this recipe is how I have avoided any ingredient which may be high in fat or high in calorie count. My choice of veggies and my choice of ingredients has made this salad incredibly healthy. In fact, its the most amazing summer salad that you can ever think of.

I am a huge fan of cucumber. My best memory of cucumber is how my mom used to cut out small thin discs and serve it with some black salt sprinkled on top. Cucumber has that cool thing which makes it's so appropriate for summer months. It's like it quenches your thirst and cools you down. Therefore how could I forget about adding such an important ingredient for my recipe?
So, first, chop your veggies. Get a medium-sized Onion, two small tomatoes or one medium, and one bell pepper. I have used only green bell pepper since this was the only thing that I had at home. In case you have yellow and red bell pepper then feel free to add them as well. They will bring in fresh colors on your plate.
Quickly grab a bowl and add your corn in it. No need to sautee or char your corn as we had done in our last corn salad recipe. Just grab them as it is. You can use both fresh corn off the cobb or frozen canned corn.

In to the corn goes a bowl of diced cucumbers. In that, we add our bell peppers, followed by tomatoes, Onions, and lastly season it with some salt and pepper. Add some olive oil. And, That's it. No extra step. Oh! just one more. Drizzle the cilantro-lime dressing all over the salad and mix them well. And, there you go. Your Healthy Summer Corn Salad with Cilantro Lime Dressing is ready!

How to store this Salad?
I would recommend not storing it since the beauty of this lies in its freshness. However, if you have to store it then cover the bowl with a plastic wrap and keep it in the fridge. It would be fine for about a day or two. But, make sure you cover it.
What are the Other Variations of Mexican Corn Salad Recipe?
- Mayonnaise - You can add Mayonnaise if you want. I think it would make it a lot creamier.
- Red and Yellow bell Peppers - You can add colorful Bell Peppers as it will make it more colorful.

Mexican Corn Salad with Cilantro Lime Dressing
INGREDIENTS
- ½ Cup Sweet Corn
- ½ Cup Cucumber
- ¼ Cup Green Pepper
- ½ Cup Tomatoes
- ¼ Cup Red Onions
- 1 teaspoon Salt
- 1 teaspoon Black Pepper Powder
- 1 teaspoon Olive Oil
INSTRUCTIONS
- Chop the veggies and keep aside. Make the Cilantro Lime sauce and keep aside.
- Put all the veggies along with salt and pepper and mix well.
- Dress with the Cilantro lime Sauce and serve.
