Is it Schezwan or Szechuan
I have been confused about these two terms for a long period of time. But now I know. So, Szechuan comes from Sichuan which is a densely populated Southwestern Chinese Province. "Szechuan" is an old term whereas "Schezwan" is a new and modern version of the same spelling.
It's just that different people pronounce differently. And that's how the spelling got changed. But the bottom line is - Schezwan and Szechuan are the same things.

Schezwan Noodles Recipe
Basically, Schezwan Noodles is an Indo-Chinese recipe where Noodles are tossed in Schezwan sauce. The Schezwan Sauce is spicy, hot, and is just enough sweet.
It is so tasty that you are surely gonna love this.

Ingredients Needed to Make this recipe
- Noodles - I used Instant Noodles.
- Water & Olive Oil - to cook noodles. Oil helps the noodles from sticking to each other.
- Salt
- Sesame Oil - to cook the veggies
- Onions - You can use Red/Yellow/White Onions
- Garlic - Minced Garlic adds a kick to the recipe.
- Carrots - Diced Carrots bring sweetness and color to the recipe.
- Green Beans - Green Beans work so well with this recipe.
- Bell Pepper - Diced Bell Pepper brings that added crunch to the recipe.
- Salt and Pepper
- Tastemaker - you can make it at home as well. See notes in the recipe card
- Schezwan Sauce - Use a good quality store-bought sauce or make it at home.
How to Make Schezwan Noodles
Step 1: Cook Noodles
In a pot heat some water with Olive Oil and Salt. Add Noodles and cook for 2-3 minutes or as per package directions.

Step 2: Strain Noodles in Colander
When the Noodles are almost cooked, take them out in a colander. Immediately Pour cold water and stir well so that they stop cooking. Now drain the water and keep the noodles aside.

Step 3: Sauté Veggies
In another pan heat some Sesame Oil. As soon as the oil shimmers add Onions. Cook until onions are translucent. Add minced garlic and cook for another 30-seconds until they turn aromatic. Now add chopped veggies - bell pepper, carrots, and green beans (the order is not important). Sauté for just 30-seconds. You don't want to overcook your veggies.

Step 4: Add Salt, Pepper, Tastemaker, and Schezwan Sauce
Here the order is not important. Make sure you adjust the salt as per your taste.
And, in case you don't have a tastemaker you can add - Ground Cumin, Ground Coriander, Garam Masala, Chili Powder, Onion Powder, Garlic Powder, Amchur Powder (Dry Mango Powder), Salt, and Ground Black pepper Powder.

Finally, stir well to combine.
Step 5: Add Cooked Noodles
Finally, add cooked noodles and toss well to combine. And simply serve right away.
Since this noodle is already saucy so you won't need any other sauces on top. You can enjoy it just like that.

Expert Tips You Shouldn't Miss
- Oil - Make sure you add some Oil while cooking your noodles. This is a secret tip that most people won't tell you.
- Cold Water - Pour Coldwater once your noodles are cooked. You don't want your noodles to get extra cooked.
- Do not overcook veggies - Overcooking your veggies is the last thing that you want to do. You certainly want them to be crunchy. So, make sure you sauté them for no more than 30-45 seconds.
- Tastemaker - Tastemakers already have salt in them. So, make sure you add salt as per your taste.
What Kind of Noodle Should I Use
Don't worry. This recipe is so forgiving. You can use any variety of noodles you have at home and it will still be totally worth it.
Here are the types of noodles which you can use -
- Rice Noodles - (the most common noodles)
- Egg Noodles or Lo-Mein (Chewier than rice noodles but insanely popular in Chinese dishes)
- Rice Vermicelli Noodles - Thinner than rice noodles but works just the same.
- Naengmyeon or Soba or Buckwheat Noodles - These Beige and Brownish noodles can also be used to make Szechuan Noodles.
What other Vegetables Can I Use
This recipe can be made with so many veggies. Here are some options:
- Bok Choy - One of the most common ingredients in Asian recipes, Bok Choy can definitely be used.
- Scallions - Another common ingredient in most Asian recipes, Scallions will make a good garnish.
- Cabbage - Red Cabbage or White Cabbage will definitely be a good addition to this recipe for Szechuan noodles.
- Broccoli - Fresh green Broccoli is another super-food that can surely be added to this recipe.
- Brussel Sprouts - This leafy vegetable can also be a part of your Schezwan noodles.
- Squash - Butternut Squash or Pumpkin Squash or Acorn Squash will also make a good addition to this recipe.
- Green peas - Green peas can also be a part of your Szechuan noodles. It will add color and crunch.
- Edamame Beans - You can also add Boiled Edamame Beans to this recipe.
I want to add some Protein. What are my Options
- Tofu - In case you are looking for a good vegan protein source then tofu would be a great addition to this recipe.
- Meat - You can add chicken or beef or pork or shrimp as per your choice.
How Do I Store the Leftovers
You can store your Schezwan noodles for at least 2-days in the refrigerator. I do not recommend freezing them.
Once they come down to room temperature, transfer them to an air-tight container. Keep it in your refrigerator for 2-days. When ready to serve, make sure you warm it in your oven.

INGREDIENTS
To Make Noodles
- 250 gram Noodles Instant or Chow Mein Noodles
- Salt as per taste
- 2 tablespoon Oil
- 6 cups water to cook noodles
To make the sauce
- 2 tablespoons Sesame Oil can be replaced with canola oil (for stir frying)
- 1 Medium Onion finely chopped
- 4 cloves Garlic minced
- 1 medium Carrot diced
- 1 Medium Bell Pepper (half) diced
- 7-8 small Green Beans cut into 1-inch slices
- Salt as per taste
- 1 tablespoon Ground Black pepper or as per taste
- 6 packs Tastemakers See notes for ingredients if you don't have tastemaker
- 1 cup Schezwan Sauce homemade or storebought
INSTRUCTIONS
- In a pot boil water with salt and some oil. Add Noodles and cook as per package directions.
- Once cooked, transfer it to a colander and pour cold water immediately so that the cooking process stops. Drain the water and keep the noodles aside.
- In a pan heat some Sesame Oil. Once the oil gets hot, add chopped onions. Cook onions on medium-high heat until they get translucent. Then add minced garlic cloves and sauté for not more than 30-seconds. Now add chopped veggies (carrots, bell pepper, green beans) and sauté for 30-45 seconds. Do not overcook veggies as you want them to be crunchy.
- Now add Salt, Pepper, and Tastemaker. Toss well to combine. Add your Schezwan Sauce and toss well to combine it with the veggies.
- Finally, add cooked noodles back into the pot. Toss well until combined. Serve right away.

- Alternative to Tastemaker - In case you don't have a tastemaker you can add - Ground Cumin, Ground Coriander, Garam Masala, Chili Powder, Onion Powder, Garlic Powder, Amchur Powder (Dry Mango Powder), Salt, and Ground Black pepper Powder. ground coriander can be replaced with curry powder.
- Stir-Frying Veggies - Since we are making an Indo-Chinese recipe, it is important that you stir fry your veggies only on High Heat. When you toss them on high heat they get that smoky charred flavor that tastes so amazing.
- Coat your Pan with Oil - Make sure you coat your Pan or Wok or Skillet (whatever you are using) with oil completely before sauteing anything. You don't want the veggies to get burnt or stick to the bottom of your cooking utensil.
- Overcooked Noodles - Make sure you follow the instructions in the package strictly or else you might end up overcooking noodles. Overcooked noodles are mushy, soft, and sticky. You do not want to overcook your noodles at any cost.
