- chickpea drained and rinsed
- olive oil
- fresh cloves garlic smashed and peeled
- smoked paprika
- sweet paprika
- chili powder
- roughly chopped chipotles plus 2 teaspoons adobo sauce

How to Make Crispy Chickpea Tacos for a Weeknight Dinner (Even if You're Not a Chef)
- Cook Chickpeas
Heat Olive Oil in a skillet. Add the seasonings and spices. Toss well and cook for 2-3 minutes.

- Add Cilantro and Cook Some More
Add freshly chopped cilantro and cook for an additional 2-3 minutes.

- Assemble Tacos
Start assembling tacos. Spread mashed avocado or guacamole to your tortillas. Add chickpeas, pico de gallo, fresh coleslaw and drizzle some homemade hot sauce. Enjoy right away!

The Quickest Way to Make Crispy Chickpea Tacos
You can also roast your chickpeas in the oven. See my recipe for oven-roasted chickpeas here. But it is going to take even longer. It takes approximately 40-minutes to get your chickpeas roasted in the oven.
If you are using cooked chickpeas then you can roast your chickpeas in the oven.
Other than that, making this in the skillet is a great option.

- Chipotle Crema - You can serve your Chickpea Tacos with Homemade Chipotle Cream. Making Chipotle cream is so easy. Just combine sour cream, chipotle pepper in adobo sauce, smoked paprika, lime zest, lime juice, and salt.
- Avocado Crema - Combine Avocados (peeled and pitted), with lime juice, cilantro, sour cream, freshly minced cloves of garlic and salt to make avocado crema.

- Mashed Avocados - Simply use 1 hass avocado, peeled and pit removed. Mash the avocados with lime juice and salt. Spread it on your taco and assemble the chickpeas.

Chickpea Tacos {Vegan, Gluten-Free}
INGREDIENTS
- 1 (15 oz) can chickpea drained and rinsed
- 2 teaspoon olive oil
- 2 medium cloves garlic smashed and peeled
- ½ teaspoon smoked paprika
- ½ teaspoon sweet paprika
- ½ teaspoon chili powder
- 2 tablespoons roughly chopped chipotles plus 2 teaspoons adobo sauce from one 7 ounce can
- ½ teaspoon ground cumin
- ½ teaspoon kosher salt or as per taste
- freshly ground black pepper
- 1 tablespoon lime juice
- flour tortillas for serving
- ⅓ cup freshly chopped cilantro
Serving Suggestions

- vegan cotija cheese optional
- fresh homemade coleslaw optional
- homemade pico de gallo optional
- homemade hot sauce
INSTRUCTIONS
- Heat olive oil in a skillet over medium heat.
