Can't believe summer is almost over. It's time for the kids to go back to school. I've already prepped up my game with some GRANOLA CUPS and some Peanut Butter and Jelly Muffins

Now, here's another back to school recipe (especially for those busy mornings when you so want to get back to your bed and your kids are ready to go to school)

Simple & Nutritious Meal served in no time ⏰

I always try to include as many veggies as possible when making something for my kids.

This easy sausage and rice skillet recipe is packed with nutrition.

Full of protein, fiber, and micronutrients this is way more amazing that anything that you can ever imagine.

Moreover, my Homemade Cajun Seasoning acts as a cherry on the cake.

Making it just enough spicy, herby, and tasty all at the same time.

There are so many ways to make sausage and rice.

  • Smoked Sausage with Rice - Instant Pot / Slow Cooker
  • (20-min) Sheet Pan Roasted Sausage & Veggies

But, this one is my favorite. Less mess, less clean up. And, the best part - comes together in a jiffy.

Ingredients needed to make Sausage Pepper and Rice skillet

These are the ingredients you'll need to make this italian sausage and white rice recipe.

  • Avocado oil
  • Kielbasa Sausages
  • onions
  • yellow bell pepper
  • green bell pepper
  • red bell pepper
  • cajun seasoning
  • salt
  • freshly ground black pepper
  • cooked rice
  • Cholua (a low-carb version of Mexican hot sauce)

See recipe card for quantities.

Instructions

Sauté sausages and onions in a pan with some oil or butter.

Add in colorful bell peppers and sauté for a while.

Add in cooked rice and season with salt, pepper, and cajun seasoning.

Toss well and serve hot.

Hint: It's not important that you have to use cajun seasoning, you can choose any seasoning that you like.

Substitutions

  • Sausages - You can use any other variety of sausage that you prefer.
  • Oil - Replace Avocado Oil with either Olive Oil or Butter.
  • Yellow Onion - For a mild taste, you can substitute red onions with yellow onions.
  • Rice - Generally, everyone uses white rice. But, if you want you can use brown rice as well.
  • Cholua - If you can find Cholua then you can use any variety of Hot sauce you find in the market. or simply make Hot sauce at home.

Variations

  • Spicy - instead of Kielbasa sausage you can use Andouille sausages for a spicy and smoky taste.
  • Diced Tomatoes - This is completely optional. If you want to add more veggies like diced tomatoes you can do so.

Can I Cook Rice in the Same Pot?

Yes. That'll be amazing.

You can cook rice in the same pot along with sausage and pepper. Just add raw uncooked rice in the skillet with equivalent amount of chicken broth. Cover and cook for 5-10 minutes or until the broth is well absorbed and the rice is fully cooked.

How do you cook sausages in a pan?

To cook sausages in a pan, add about a tablespoon of oil in the pan. You don't need to add more oil since sausage contains fat and that is more than enough to cook it.

Just add a tablespoon of oil in the pan and cook one side until lightly golden brown.

Flip it over and cook the other side as well.

Basically oil forms a barrier between the sausage and the pan. It keeps the sausage from sticking to the pan.

How do you tell if a sausage is cooked?

Don't go by the color of the sausage on the outside. It can be very deceiving. Although it looks crisp on the outside, it might be quite raw on the inside.

So, use a meat thermometer to figure it out. If it records an internal temperature of 155 to 160 degrees F then your sausage is perfectly cooked.

What do you eat with sausages and peppers?

Sausage and Peppers can be served with rice (since this a one-pot recipe) therefore there is nothing else that you need with this.

But, in case you want to try sausage and pepper with something else you can choose from:

  • Creamy Mushroom Garlic Risotto
  • Garlic Butter Sauteed Green Beans with Parmesan
  • Cucumber Salad
  • Cajun Chicken Pasta
  • Sweet Corn Casserole {5-ingredient} with Jiffy Mix

How do I make Cajun Sausage?

Share something here that you think is key to making this recipe well, such as: Don't overcook the burgers! Sear the outside and cook to a minimum internal temperature, but they should still be juicy for best results.

TOP TIPS

  • Always use Cast-iron skillet when making this recipe. You can use a non-stick skillet, but cast-iron is much better.
  • I prefer Avocado Oil since its the healthiest form of oil available in the market today. You can definitely choose olive oil, or butter or anything else that you like.
  • I like Kielbasa Sausages so I have used them, feel free to swap it with Andouille sausage or any other sausage that you like.
  • If you prefer a much healthier version of this one pot sausage and peppers with rice then you can use Turkey Sausages.
