Hey you guys! Happy Weekend. This weekend I thought of doing something different. Rather than sharing the same old desserts, it's time for something savory to get baked in the oven.
So, today I'll share with y'all a recipe which is my true and 100% original - Pesto Caprese Pasta Pizza. It's nothing like you've had before. This is something totally different and unique and let me assure you, it tastes delicious! It's the best dinner recipe ever. Fuss-free and easy to bake! Perfect for lazy summer nights when its just too hot to get cooking in the kitchen.
So, I baked this Pesto Caprese Pasta Pizza last night. It's so tasty you guys! I love the cheesy layer on top and the soft Pasta adds to the comfort of this recipe. I'd call this recipe the perfect weekend dinner recipe because it's so easy, it's a perfect Lazy Man's dinner and it's so comforting! I think this is the best Lazy dinner recipe which you'd want to make once every week.
I just love to make Pizza at home. Most of the time I make my own Pizza base with my eggless and no yeast Pizza dough recipe. It's seriously the best and so useful when you're stuck at home and need to serve dinner quickly to a hungry family.
Whenever I bake Pizza I try to make use of whatever leftovers I have, be it some Spaghetti or some Pasta or even some Rissoto. I quickly toss it along with some veggies, salt, and pepper and use it as my topping for my Pizza. It's seriously the best way to use up leftovers!
So, while working in the kitchen, I thought, how to use up my leftover recipes. The biggest concern every food blogger faces is how to space out your refrigerator. And so most of the time, I am heating up my leftovers and having them one way or another.
However, when I gave organizing the Fridge some thought, I remembered how my Mom used to use up leftover rice from lunch to make some Vegetable Fried Rice at night. We used to have it with some Pickle or Yogurt and it tasted so great. From there I got the inspiration to make something which will help me use up my Pasta.
Although for this recipe, I really did make the Pasta from scratch and then used it fresh.
However, I think if you want to use up any leftover Pasta or Noodles or Ramen or Rice, this could be a fun way to use it up.
Making the Pesto Caprese Pasta
As you might have imagined by now, the first step to making this recipe is to make some Pasta.
Start with cooking some Pasta over boiling hot water with salt and olive oil until al dente. I have used Fusilli Pasta, you can use any variety you have.
Once your Pasta is cooked strain the water and keep aside.
Now heat some Olive oil in a Pan and add the chopped Tomato rinds, Corn kernels, Jalapenos, and Sundried Tomatoes. Put the flame on high and cook these until it stops to sizzle. Season with Pesto Sauce Freshly grounded Black Pepper and Salt, and combine everything until it gets mixed. This is what I love about this recipe. It's barely any effort, just combining veggies with the cooked Pasta...and it's done!
Now, take a Pizza base or make your own and slather it with Pesto sauce. Top with the cooked Pasta.
Top your Pizza with shredded Cheddar and Mozzarella Cheese, You can add some more Tomatoes or any other topping you wish to at the top and then just bake it for 11 minutes at 400F or 200C or until the edges turn golden brown.
Once baked, top with some fresh Basil, Oregano, and Chili flakes, cut your Pizza using a Pizza Cutter, and enjoy this cheesy goodness...!
So, that's how you make the easiest dinner recipe!!! It's so good. When I served this, my Dad just loved the Pesto flavors along with the cheesy goodness. He just said, "I miss the lime"! So, when you make this don't forget the lime! And he was right. Lime actually brings out the Pesto flavors even better. I had totally forgotten about it. Also, you can add some Capers for that extra crunch. It's seriously the best though...!

Pesto Caprese Pasta Pizza
INGREDIENTS
Pesto Pasta
- ¼ pound Fusili Pasta
- 2 medium sized Tomatoes thinly sliced
- 1 cup Corn Kernels
- 3-4 pieces Sundried Tomatoes
- ¼ Cup Jalapenos sliced
- 5-6 cloves Garlic chopped
- 2 tablespoon Extra Virgin Olive Oil
- 2 tablespoon Dried Chili Flakes
- 2 tablespoon Dried Oregano
- ½ Cup Fresh basil chopped
- ¼ Cup Pesto Sauce
- 1 tablespoon Lemon Juice
- 1 teaspoon Kosher Salt and Black Pepper
- ¼ Cup Cheddar Cheese
- ¼ Cup Mozzarella Cheese
- 1 regular size Pizza Base
INSTRUCTIONS
Making the Pasta
- Bring a Pot of water to boil with some Oil and Salt. Add the pasta and cook until al dente as per Package instructions.
- Heat Olive Oil in a skillet and add the veggies, fry it until it stops to sizzle.Add the cooked Pasta over it along with the Pesto Sauce, Kosher Salt, and Black Pepper and mix well. Add the Lemon juice and stir well.Keep aside the cooked Pesto Pasta.
Making the pizza
- Roll out the pizza dough on a floured surface or use a store-bought Pizza Base.
- Spread the pesto sauce over it along with the cooked Pesto Pasta. Add the cheese along with the tomatoes and jalapenos.
- Bake your Pasta Pizza for 11 minutes at 400F or 220C or until the sides turn golden brown.
- Top with some Fresh Basil, Dried Chili Flakes, Dried Oregano and enjoy!
