Hey people! Summers are just about to end and it's time to enjoy the best of the summer season in the last few days left. This No-Bake Key Lime Cheesecake screams summer to me. It's zingy, zesty and so delicious.
I just love Key Lime desserts. In fact, I love the aroma of Key Lime so much, I love to enjoy it with everything I am having. Especially during summers, I like to include it in my morning Oats or smoothies or even some after dinner as desserts! Just a perfect end to my long and tiring summer days...Have you tried my Key Lime Coconut Cupcakes or my Key Lime Coconut Tart yet?
The only thing is these Key lime dry out too quickly and these days it's so difficult to find fresh Key Lime in the stores. However, I still manage to get some and keep it stored in the fridge, nicely tucked away in a wet paper napkin so that it doesn't dry out too quickly.
The Key Lime Cheesecake filling
My Key Lime Cheesecake filling is the best thing, you guys. It's so very easy that you won't believe it. Noting like your usual cheesecake filling with loads of Eggs and Vanilla. In fact, for this, I have just used 4 ingredients - Cream Cheese, Condensed Milk, Key Lime Zest, and Key Lime Juice. And that all about it. Do you believe that you can make a perfect Key Lime Cheesecake filling with just these 4 ingredients?
You can add vanilla if you wish to, but take it from an ardent Key Lime lover, myself- Vanilla extract actually comes on the way of Key Lime flavors. So if you avoid it, you'll have more of Key Lime and Cream Cheese flavors to your mini cheesecakes
Key Lime Flavor Combinations
Key Lime is super zesty and refreshing. Its got a sharp bitter and sour taste to it. There is bitterness in the zest and the tartness in the juice and the fresh fragrant is what makes this perfect ingredient for summer desserts. It has long been used for drinks and pies... Time to increase the number of dishes you can actually make with Key Lime...right?
When its desserts - especially in the summer season, we are looking for something that's not too sweet. There's supposed to be a perfect balance between all the flavors even if its a dessert. Also, the use of Key Lime makes your summer desserts naturally aromatic and fragrant, which people love because it's just so refreshing!!!
When using Key Lime in a dessert, people generally go overboard with the sweetness, trying to tame the desert. However, trust me, too much sweetness will definitely make your Key Lime dessert boring. You got to balance the flavors.
The best way to balance the flavors of Key Lime, especially in desserts is to use Coconut. Be it Coconut Milk or shredded coconut. It brings in a natural sweetness to your desserts and not to mention, you have the best tropical flavors in your desserts!
About the Crust
So, I have made the cheesecake crust with some graham crackers, butter, and ground almonds. Also, I have added some granulated sugar so that it has a nice sweetness to it which balances out the saltiness of my butter and the bitterness of the Lemon Rinds and Lime Zest.
Almonds go great with Key Lime. In fact, Almond is the only nut that I think pairs perfectly with any lemon desserts. Next time you make anything lemony do try it with Almonds.
I love a good Key Lime Pie. And the key to a good Key Lime Pie is obviously the crust. You need to have a really thick crust. So, this crust for my Mini Key Lime Cheesecakes is actually extra thick. In fact, to get them all crunchy I baked these for about 30 minutes at 350F. And trust me, this made these cheesecakes extra good.
No Bake Key Lime Cheesecakes Cups
INGREDIENTS
- 3 sheets Graham Crackers
- ¼ Cup Ground Almonds
- 1 cup Salted Butter melted
- 1 tablespoon Granulated Sugar
- 8 oz Cream Cheese 226 gms
- 3.5 oz Condensed Milk 100gm
- 1 tablespoon Key Lime Zest
- 1 teaspoon Key Lime Juice
INSTRUCTIONS
- In a mixing bowl combine the graham cracker crumbs with ground almonds.Add melted butter to it and some granulated sugar. Mix everything until you have wet sand-like consistency.
- Place the crumbs in a cupcake liner lined muffin tin and keep aside.
- In a bowl take cream cheese, Condensed Milk, and Key Lime Zest. Beat it using a handheld mixer at high speed until it thickens.Add the Lemon Juice and mix it again.
- Pour this key lime cheesecake filling over the crumb layers and allow it to freeze for 2 hours in the freeze.
