I think I have told it enough that I really LOVE the combination of Mint and Chocolate. You must have read about that in my other articles like Mint Chocolate Chip Cookies, Mint Chocolate Chip Cookie Dough Balls and Mint White Chocolate Fudge.
Whether you want to make some real quick dessert for St. Patrick's Day or you need to make a Grinch themed dessert for Christmas or you just need to feel the heavenly combination of Mint and Chocolate in your mouth, this recipe is just what you need.

Mint Chocolate Chip Muffins
What I love about my Mint Chocolate Chip Muffins is how easily I can make them. I had recently made Orange Cranberry Muffins and it was a huge hit in my family. My kids loved it. In fact, my husband shared it with his friends in his office and they went mad over it! Well, it was sort of heart-warming for me. Hence, I knew how to give these muffins the desired taste.
Moreover, I love working with chocolate chips. Be it white Chocolate Chips or Dark Chocolate Chips. It brings in a little bite in my mouth hence giving more flavors into the muffin.

To make these Muffins I first of all creamed by Sugar and Butter. This is a really important first step in the baking of Muffins as this will allow air to get incorporated in the batter.
After this, I started adding flour in batches. I have used refined flour in my recipe as it gives a good rise to the muffins. However, you are free to change it with any flour you have because it really won't make that much of a difference with AP Flour as well.
Once the flour was mixed well, I started adding other Wet ingredients such as Greek Yoghurt, Vinegar, Baking Soda, Baking Powder, Green Food Color, and Mint Extract. I whisked it all until lumpy. I keep my Muffin batter Lumpy and not smooth like a cake batter.
I have not used Andes Mint Chocolate Chips for this recipe, because I love the flavor of deep-seated Mint extract than just in the chips. However, you can add in the Mint Chocolate Chips as well and it will be so much fun.
Finally, I added in the choco chips and mixed them with the mixture. After this, it was just about placing the Muffins in the mold and baking them at 420 F for 5 minutes and then 320 F for another 5 minutes.
Finally, my Muffins were ready.

Mint Chocolate Chip Muffins
INGREDIENTS
Wet Ingredients
- ¼ Cup Brown Sugar
- ¼ Cup Refined Oil You Can use Softened Butter as well
- 3 tablespoon Granulated Sugar
- ¼ Cup Milk Optional
Dry Ingredients
- 1 Cup Refined Flour
- ½ Cup Dark Unsweetened Chocolate Chips
- ½ teaspoon Baking Soda
- ½ teaspoon Baking Powder
- ½ teaspoon Vinegar
- 2 tablespoon Yougurt
- ½ teaspoon Mint Extract
- ½ teaspoon Green Food Color
INSTRUCTIONS
- Pre Heat your Oven at 420F or 220C
- First cream your wet ingredients for at least 2-3 minutes in a hand blender.
- Gradually add refined flour in parts into the mix.
- Now throw in all your Dry Ingredients and blend for 30 seconds to 1 minutes at low speed. Do Not Overmix.
- Add Dark Unsweetned Chocolate Chips into the muffin batter and lightly fold it with a spoon.
- Bake at the given temperature for 5 minutes.
- After 5 minutes reduce the temperature by 100 Degrees and bake them for additional 5 minutes.
