Easy Shrimp Burrito Bowl is a quick and easy dinner recipe. This is a perfect make ahead recipe. Its low carb, keto, gluten free and healthy. Instead of wrapping in a Tortilla its served in a bowl with roasted Cajun Shrimps, Fajita Veggies, Black Beans, Avocado and Cilantro Lime Rice. Serve it in a bowl or serve as a wrap or a salad you will love it for sure!

Healthy Mexican Shrimp and Rice Burrito Bowl is a low carb, Keto dinner recipe.

Made with Cilantro Lime Rice, Avocado, Fajita Veggies, Shrimps, Picked Onions and topped with Guacamole and a creamy Cilantro Lime dressing, this is bursting with flavors.

Shrimp Burrito Bowl is a very easy, handy and cheap dinner recipe which I love to make on a busy weekday.

Also its obviously Low Carb, Keto and Gluten Free.

Here I have served it with Cilantro Lime Rice.

However you can also serve with cooked Brown Rice or Cauliflower Rice or Cilantro Lime Quinoa.

Easy Shrimp Dinner

On busy weeknights, Shrimps are my go to option. An easy Shrimp dinner feels like the perfect weeknight dinner.

Its so easy to make and kids love it too.

Also Shrimps cook really fat. It takes just 2-3 minutes for Shrimps to cook.

And toss with any seasoning of your choice and its done.

Best part, you can meal prep this Mexican Shrimp and Rice Burrito Bowl, ahead of time and serve it as a quick lunch or dinner.

Healthy Burrito Bowl

Burrito Bowls are perfect for a quick lunch or dinner. Its a great idea to skip the Tortilla.

Also you don't have to do the wrapping.

Its simply assembling veggies, meat of your choice,Rice or Quinoa or Cauliflower Rice, Avocado, Guacamole, Pico de Gallo, Black Beans and Corn and then its done!

You can swap Shrimps with Chicken as well!

For Vegetarian versions you can use Chickpeas or Tofu or Cauliflower.

Ingredients Needed to make Mexican Shrimp and Rice Burrito Bowl

  • Cooked Rice - preferably serve with Cilantro Lime Rice or Cilantro Lime Quinoa or Cauliflower Rice
  • Fajita Veggies - I love to use red, green and orange bell peppers in this Shrimp Burrito Bowl.
  • Cajun seasoning - I love Cajun Seasoning and how amazingly it makes a simple dish taste amazing.
  • Shrimps - I use Jumbo Shrimps for this recipe.
  • Avocado Oil - for cooking. I always use Avocado Oil as its the healthiest cooking oil right now.
  • Lime juice & Honey - this balances the spice of Cajun seasoning and also gives a nice sweet and sour taste to the Shrimps.
  • Garlic cloves
  • Picked Red Onions - you serve picked onions in the Bowl. Its so tasty!
  • Kosher Salt - to taste
  • Black Beans - rinsed and drained
  • Corn - canned
  • Avocados - thinly sliced
  • Fresh Cilantro - finely chopped
  • Guacamole - for topping
  • Lime Wedges - for serving
  • Cilantro Lime Dressing

How to make Shrimp Burrito Bowl

DEFROST SHRIMPS

  • I generally buy frozen Shrimps at Costco because they come peeled and de veined. All you need to do is thaw and use them.
  • The best way to defrost Shrimps is to just keep them out in the sink for 30 min prior to cooking.
  • Alternatively you can even thaw overnight in the refrigerator before using.

COOK SHRIMPS

  • Heat a large skillet and add Avocado Oil in it.
  • As the oil shimmers add the Shrimps and cook for 2-3 min or until they curl and get pink.
  • Add the Cajun seasoning, minced garlic, Lime Juice, Honey and Salt. Toss to combine. Cook for 2 more minutes or until fragrant.
  • Get it off the heat and set aside.

ASSEMBLE THE BURRITO BOWL

  • Add the chopped Fajita Veggies in the bowl along with chopped Avocado slices, drained and rinsed Black Beans, Thawed Corn, Cilantro Lime Rice.
  • Add the Shrimps. Top with Guacamole or Sour Cream
  • Drizzle Cilantro Lime Dressing on top and serve.

Besides this Cilantro Lime Dressing you can top with anything. From this spicy Tahini dressing to Avocado Crema to Ranch Dressing to simply some Sour Cream or Greek Yogurt.

Hint: You don't always have to make it in a bowl. You can serve it as a Salad, Tacos, Wraps etc!

Substitutions

  • Chicken- instead Shrimps you can use Chicken. Just cook Chicken breast in Oven or Air Fryer, cut it into slices and serve in this Burrito Bowl.
  • Veggies & Fruits - these bowl ingredients are simply a suggestion. You can swap veggies as per your choice. Add fresh seasonal fruits like Watermelon, Mango or Pineapples to this.
  • Quinoa or Cauliflower Rice or Brown Rice - instead of Cilantro Lime Rice, you can serve this Shrimp Burrito Bowl with Quinoa or Cauliflower Rice or cooked Brown Rice.

Storage

Store leftover Shrimp Burrito Bowl in an airtight container in the refrigerator.

However if you're storing, remove the Avocado slices as they do not store well.

These ingredients don't stand up well to freezing. So please do not freeze

How to make ahead Burrito Bowl

In this fast paced life, I love make ahead recipes.

It keeps me on track with my healthy food routine and avoids the temptation to order takeout food.

You can easily meal prep this dish. Just skip the Avocado and the dressing. You can add them right before serving and enjoy!

Top Tips to make the best Shrimp Burrito Bowl

  • Defrosted Shrimps - its always great to use defrosted Shrimps. It only takes about 15-20 minutes to thaw frozen Shrimps when kept at room temp on the sink.
  • Meal Prep - Burrito Bowl is an excellent meal prep dinner recipe. You can easily meal prep this Shrimp Burrito Bowl ahead of time.
  • Seasoning - instead of Cajun seasoning, you could use any seasoning you have at home. From Taco Seasoning to Old Bay Seasoning to Blackened Seasoning to Jerk Seasoning etc.
  • You can even just use Onion & Garlic Powder along with some Cayenne Pepper to season the Shrimps.

INGREDIENTS

for the shrimps

  • 1 pound Jumbo Shrimps peeled and deveined
  • 2 cloves Garlic minced
  • 2 tablespoon Cajun Seasoning
  • 1 tablespoon Honey
  • 1 Lime zested and juiced
  • 1 teaspoon Salt
  • 2 tablespoon Avocado Oil for cooking

for the burrito bowl

  • 1 cups Cooked Rice see notes 1
  • 1 can Black Beans drained and rinsed
  • 1 can Frozen Corn thawed
  • 2 large Avocados thinly sliced
  • 1 medium sized Red Onion thinly sliced
  • 3 tablespoon White Vinegar
  • 1 medium sized Bell Pepper red, green and orange, thinly sliced
  • Lime Wedges for serving
  • Guacamole for serving
  • fresh Cilantro finely chopped, for serving
  • Cilantro Lime Dressing

INSTRUCTIONS

  • Thinly slice the red onions. Add the white vinegar in a medium sized mixing bowl and add the sliced Red Onions in it. Soak for about 5-10 min or while you're cooking the Shrimps. This is your picked Onions. Its full of taste and flavor. While using discard the vinegar and just use the Red Onions as is in the burrito bowl.
  • Heat a large skillet over medium high heat. Add Avocado Oil in it. As the oil shimmers, add the Shrimps and cook for 1-2 min (both sides) or until they curl and get pink.
  • Add the Cajun Seasoning, minced garlic, Salt, Honey, Lime Zest and Lime Juice to it. Toss to combine and cook until fragrant for 2 min. Once cooked, set aside.
  • Assemble the bowl. Add the cooked rice to one side, followed by the Shrimps, drained Black Beans, Corn, Avocado Slices, Picked Red Onions, and thinly sliced Bell Peppers. Top with a dollop of Guacamole or Sour Cream. Drizzle the Cilantro Lime Dressing on top and serve.
