Mango Cheesecake Brownies with Milk Chocolate is one of the most delicious Mango dessert recipes. It's sweet, it's chocolaty and it's so fudgy. The perfect brownie recipe which you'll love to bake so often.

Hello guys! It's the middle of Summers here and today I thought of baking these delicious Mango Cheesecake Brownies. Honestly, I had never baked these before. I just had a faint idea of how to use up some leftover Cheesecake filling. So, what I did is, I mixed it with some Mango puree to make my Mango Cheesecake filling.

Then I thought, why to bake that same old boring cheesecake when you can bake some brownies. I am always up for brownies. And when you can make some fruity brownies, it's all the more fun. Have you tried my Banana Brownies or my Cherry Chocolate Brownies or even my Orange White Chocolate Brownies? Seriously guys, if you haven't you should. Adding any fruit flavor to your brownies is a tricky business as many fruits do not pair well with chocolate but it's so worth the effort.

Mango Cheesecake Brownies have a swirled top. This swirl on top is done with some leftover milk chocolate batter and some mango puree. Do you love the color of ripe and juicy mangoes? I love it. Especially around this time of the year, these Mangoes tend to get extra ripe and the flavors get intensified. Also, that Orangish Yellow color with a touch of red is so awesome. Just how I love my mangoes.

About the Milk Chocolate

While baking these Mango Cheesecake Brownies, I was battling with the question as to which chocolate should I use. While many people have already made it with dark chocolate, I never liked the combination of Dark Chocolate and Mangoes.

Also, White Chocolate would have been just perfect but then it's not brownies unless you have a bit of cocoa. So, I decided to use my favorite and delicious - Milk Chocolate. The best thing about milk chocolate is that it's already sweet so even if you skip out on the sugar, it's still delicious. Also, Milk Chocolate compliments the juicy Mangoes.

Let's talk about the taste

These Mango Cheesecake Brownies have a sweet and creamy filling that melts in your mouth. Every bite of this brownie tastes like Cheesecake with a hint of Mangoes and Milk chocolate forms the perfect base to these, holding everything together.

Also, I just love the tri-layer color gradient which these brownies have. The lower dark layer is no crust. It's actually a milk chocolate brownie layer and on top of that is the bright yellow Mango Cheesecake layer which is topped with those gorgeous swirl layers.

How to make Mango Cheesecake Brownies?

These Mango Cheesecake Brownies with Milk Chocolate makes for a sweet and creamy brownie which is just delicious. There are 3 basic steps involved in making these brownies.

The first step - Making the Milk Chocolate Brownie Batter

So, you start by melting Milk Chocolate and butter over a double boiler and once they melt, you cool it down and then add the Granulated Sugar, Vanilla, and the Egg. Now just mix everything until it gets combined.

Next, we'll sieve the dry ingredients which are flour and Baking soda. I have used salted butter so I will not put any salt. If you're using unsalted butter, then you must add a pinch of salt at this moment. Sieve everything and fold lightly using a spatula. Do not over mix.

It is very important that you never overmix your brownies. When you overmix your brownies, a lot of air gets incorporated in it, and as a result when you bake your brownies rise but soon its caves.

Line a 9 by a 9-inch baking tray with parchment paper with sides hanging out and pour the Chocolate mix in it. Save some to swirl later.

The Second Step - Making the Mango Cheesecake Filling

Combine Cream Cheese with granulated sugar over high speed using a handheld mixer. As it gets mixed, add the mango puree and fold everything together until combined.

Pour the Mango Cheesecake batter over your chocolate batter and even it out.

The Third Step - Making the swirl

To make the swirl add a spoonful of chocolate mix and mango pulp over your brownie batter. Use a skewer or toothpick to go horizontally over it. Then go down vertically. Do not overdo it or else the marbled effect will go away.

Bake your Mango Cheesecake Brownies at 350F or 180 C for 45 minutes. After 45 minutes, insert a toothpick in the center, if it comes out liquidy - your brownies aren't yet done. If you get moist crumbs then your brownie is ready.

INGREDIENTS

  • 3.5 oz Milk Chocolate 100 gm
  • ½ cup Salted Butter
  • ¼ Cup Granulated Sugar
  • 1 whole Egg
  • 1 teaspoon Pure Vanilla Extract
  • ⅔ Cup Whole Wheat Flour
  • ¼ teaspoon Baking Soda
  • 16 oz Cream Cheese
  • ½ cup Granulated Sugar
  • ½ Cup Mango Puree

INSTRUCTIONS

  • Preheat the oven to 350F or 180 C and line a 9 by 9-inch baking tray with cooking spray and parchment paper.
  • Over double boiler melt butter and milk chocolate until combined.
  • In this add the granulated sugar, vanilla extract, and egg and combine well.
  • Sieve the flour and baking soda and combine using a spatula. Mix well until combined.
  • Line a 9 by a 9-inch baking tray with parchment paper and pour the milk chocolate batter in it. Save some to swirl later.
  • Combine Cream Cheese with Granulated sugar until creamy. Add the mango puree and mix well.
    Pour this Mango Cheesecake filling over the chocolate mix.
  • To make the swirl add a spoonful of chocolate mix and mango pulp over your brownie batter. Use a skewer or toothpick to go horizontally over it. Then go down vertically. Do not overdo it or else the marbled effect will go away.
  • Bake your Mango Cheesecake Brownies at 350F or 180 C for 45 minutes.
    After 45 minutes, insert a toothpick in the center, if it comes out liquidy - your brownies aren't yet done. If you get moist crumbs then your brownie is ready. 
    Allow the brownies to cool down before you cut them into pieces. Enjoy!

      You need just 1 Teaspoon of Vanilla Extract to make this recipe.
