I really love Hawaiian Chicken Tacos. Its got such an amazing tropical flavor to it which is just so good. You have the sweetness because of the Pineapple and also the spice because of Yellow Mustard, Sriracha, and Chili Powder! Just a perfect combination of sweet and spicy.

Instant Pot or Slow Cooker? Which is a Better Choice?
Cooking these Pineapple Chicken Tacos is really fun. You can cook the Chicken along with Pineapple, Onion, Garlic, Jalapenos, and spices in the Instant Pot or in the Slow Cooker.
I like to use the Instant Pot because it's such a time saver. The Chicken cooks in the IP in just 10 minutes and then I put it to broil in the oven to crisp up.
You can also allow the Chicken and Pineapple to cook all day in the slow cooker and then at night have everyone assemble their Tacos for themselves with their favorite dressing as well! We love this with some Spicy Sriracha!!!
You can also cook the Chicken along with Pineapple in the oven! Taking inspiration from my Chicken Carnitas recipe, I have tried making Hawaiian Pineapple Chicken Tacos in the Oven and it's just as good.
To make it in the oven, first, season the chicken with olive oil, salt, and pepper and then bake it at @450F or 200C for 15 minutes. After that, get the Chicken out of the oven and use two forks to shred it. Throw in the Pineapple chunks, the chopped Onions, Garlic, Jalapenos, and spices. Pour in the Sriracha and Yellow Mustard. Toss to combine everything and put everything in the oven at broil mode for 10 minutes. Toss midways after 5 minutes.
After this gets done you will have the Chicken get all crisped up and the juices bubbling from the Pineapple! SO yummm!!!!
How to make Instant Pot Shredded Hawaiian Chicken Tacos
STEP 1: Cook the Chicken in IP
- Add Olive Oil, Chicken Breast, Chopped Onion, Pineapple Chunks, Garlic, Jalapenos, and spices in the Instant pot
- Pour in the Yellow mustard and the Sriracha
- Add some water
- Pressure cook on high for 10 minutes
- Do a quick pressure release and remove the chicken and everything else from the pot to a Sheet Pan
STEP 2: Broil
- Shred the chicken using two forks
- Toss to combine everything
- Put the Sheet Pan in Broil mode for 10 minutes. Toss midways after 5 minutes.
STEP 3: Serve in Tacos
- Toast tortillas until pliable on the stovetop
- Add the crunchy slaw or chopped Cabbage
- Now, add the Pineapple Chicken Taco filling
STEP 4: Garnish & Serve
- Garnish with chopped Cilantro and Lime juice
- Serve immediately.
Can I use canned Pineapple?
Yes of course! You can use Canned Pineapple in place of fresh Pineapple for this recipe. However, since Canned Pineapple is soaked in Pineapple juice and sugar syrup it tends to be a little bit sweet. So you need to adjust the spices accordingly.
Other Substitutions Possible
- You can use Corn Tortilla in place of Flour Tortilla. They are crispy and crunchy and tastes really good with these Instant Pot Shredded Hawaiian Chicken Tacos.
- You can add some White Vinegar and Organic Ketchup along with other spices and sauces while cooking the Chicken. Ketchup really enhances the taste of Shredded Hawaiian Chicken Tacos, bringing out the sweet and sour flavor more!
- If you like it spicy, then add some more Chili Powder and Cayenne Pepper while cooking the Chicken.

INGREDIENTS
- 1 lbs Chicken breast
- 1 teaspoon Olve Oil
- 2 medium sized Onion finely chopped
- 1 cup Jalapenos finely chopped
- 1 cup Pineapple chopped
- 3 cloves Garlic minced
- 1 teaspoon Ground Cumin
- 1 teaspoon Chili Powder
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 2 teaspoon Yellow Mustard
- 2 teaspoon Sriracha
- chopped cilantro for garnish
- lime juice for garnish
INSTRUCTIONS
- Cook the Chicken along with Pineapple Chunks, chopped Onion, minced Garlic, chopped Jalapenos and other spices in the Instant Pot. Add some water and pressure cook on high for 10 minutes. After it gets cooked, do a quick pressure release and then empty the content of the pot into a sheet pan.
- Shred the Chicken using two forks. Toss to combine everything.
- Put the Sheet Pan in the oven at broil mode for 10 minutes. Toss midways after 5 minutes. The Chicken will crisp up in the oven.
- Toast Tortillas on the stove top until pliable. Serve this Pineapple Chicken filling in Tacos. You can add your favoruite crunchy slaw if you like. Garnish with some chopped Cilantro and Lime juice and enjoy!
