So, finally, the Summers are here. Summers are synonymous with lazy food recipes. And one such lazy yet healthy recipe is a bowl full of Black Bean and Corn Salad.
Filled with healthy and proteinaceous Black beans, Sweet Corn Kernels, Peppers, Tomatoes and Onions, this is one of the most filling salad recipes. Whether you are looking for a quick lunch recipe for hot summer days or you wish to pack some salad for work or you just need to fix yourself a healthy salad for the day you cannot go wrong with this recipe.
I hate it when food tastes bland. That's the prime reason why I am not a fan of salads. Well, if you get you to have a refreshing bowl of salad which is filling indeed, I don't think there can be anything better than that!
I generally make the Black Bean and Corn Salad during Summer months for lunch. Summer Salads are my best pals for lazy and sultry days. I look out for those long days when you are stuck at home and it's too hot to go outside! And you cannot even hit the kitchen because obviously it's way too hot to cook a meal. So, salads it is 🙂
Let's Make Black Bean and Corn Salad with lime dressing
Let's start with the most summery ingredient of the day - corn. You can use fresh corn or frozen corn. Both work fine for this recipe. I have used canned corn. First, we put some butter over a non-stick saucepan and charr our corn until they are brown and crusty from both sides.
As they get crusty we take them down from the pan and give them some time to cool down. In the meantime, we'll make the dressing.
First I prefer making the dressing. You know so that the dressing gets some time to relax and get mixed properly.
So, for the dressing, I use fresh lime juice, some garlic cloves, olive oil, salt, and pepper. We mix it well. And, that's it. Our dressing is ready.
In an another bowl, we take some washed and drained black beans, our old friend - the charred corn kernels that we had kept aside, some finely chopped red onions, some chopped juicy tomatoes, some fresh bell peppers, some cotija cheese, and some freshly chopped cilantro. We give all of these a good mix. And that's it.
Lastly, we pour our dressing all over the black bean and corn salad and that's all. Our work is done for the day.
Wasn't that the easiest salad that you've ever tasted. Well, trust me it tastes delicious too. You can easily have this for lunch or dinner and feel light and easy-going.
What veggies are used in Black Bean and Corn Salad?
Apart from Black Beans and Sweet Corn, I used Onions, Tomatoes, Peppers and topped with some freshly chopped cilantro.
If you wish you can add some Avocado as well. You can also add some chopped Jalapenos and some chopped Green Onions if you have those at home.
You can also make it a meal by serving it alongside some grilled Fish or Chicken.
For the dressing, I have used Lemon juice, Garlic, Olive Oil, Salt, and Pepper.
Healthy Black Bean and Corn Salad with Lime Dressing Recipe
INGREDIENTS
- 1 Cup Corn off the cob or canned
- ¼ cup Butter
- 1 Cup Black Beans washed and drained
- 1 Medium-sized Red Onions
- ½ Chopped Bell pepper Green
- 1 Cup Tomatoes Chopped
- 2 tablespoon Cotija Cheese or as per taste
- ½ Cup Cilantro chopped
For the Dressing
- 2 tablespoon Lime Juice
- 10 cloves Garlic chopped
- 1 teaspoon Pepper or as per taste
- 1 teaspoon Salt or as per taste
- 1 tablespoon Olive Ol
INSTRUCTIONS
- Charr the corn kernels our a saucepan with some butter on both sides.
- Mix all ingredients of the dressing and keep aside.
- In a medium-sized bowl, mix black beans, charred corn kernels, and all the chopped veggies. Mix well.
- Add some grated Cotija Cheese and Chopped Cilantro. Finish off by pouring the dressing over the salad. Mix well.

- If you want you can add some Mayonnaise. But since it will increase the calorie count so I have decided to avoid it.
