These Grilled Buffalo Chicken Skewers are so so so easy to make, require just a few basic ingredients but are super high on flavors. I personally love everything Buffalo and this one has my heart. It's just the best Chicken Kabob recipe ever!

Let's Talk Taste

These Grilled Buffalo Chicken Skewers are spicy and so yum! There is the charred and smokey flavor of grilled chicken and veggies. Also, the spicy taste of Buffalo sauce, the kick of Cayenne Pepper and Garlic Powder makes this taste so damn good. I especially love this with some comforting sides like Baked Mac and Cheese or Garlic Parmesan Smashed Potatoes or a Good Summer Potato Salad.

You can also serve this over some rice for a complete meal.

Kabobs are one of our family's favorites. We love to heat up the grill and make Kabobs especially around this time of the year when it's sunny, bright, and refreshing in the outdoors.

Tender, juicy, and flavorful Chicken along with grilled veggies tastes so good. Also, the choice of veggies is limitless. From Bell peppers to Zucchini to Summer Squash, you can knead any summer veggie in the skewers and grill them to perfection!

How Do You Make Grilled Buffalo Chicken Skewers?

STEP 1: Chop the Chicken

  • I am using Chicken Thigh pieces here because they are juicy, tender and so flavorful
  • Chop the Chicken Thigh Pieces into 1-inch cubes

STEP 2: Marinate the Chicken

  • Toss Chicken Pieces with Salt, Pepper, Garlic Powder, and Cayenne Pepper. Cover and refrigerate for 1 hour or 8 hours (if possible)
  • This is the most important step of this recipe because it's the marinade that builds up the flavors in this Grilled Buffalo Chicken Skewers. I have not added Buffalo Sauce to the marinade because you don't like a smoked Buffalo sauce taste. So, you need to add it while grilling these skewers.

STEP 3: Grill

  • Grill the Skewers @400F for 5-7  minutes or in a Grill Pan.
  • Brush Buffalo Sauce over the Skewers

STEP 4: Serve

  • After these Grilled Buffalo Chicken Skewers get grilled, drizzle some more Buffalo sauce on top and serve immediately.

  • These Grilled Buffalo Chicken Skewers are extremely versatile. You can use any Veggies or Squash you have at home.
  • You can grill these in the outdoor grill or in an indoor grill or in the grill pan or in the oven.
  • Do not forget to soak the bamboo skewers in cold water. Soaking the skewers will moisten them and prevent them from getting burnt in the hot grill.
  • You can use Chicken Thigh or Chicken breasts pieces, it's totally up to you.
  • You can always change the veggie combination and use any veggies you love to grill with the Chicken. In fact, this is the best part about these Grilled Chicken Skewers. They can be easily altered as per your personal preferences.
  • You can substitute Bell Peppers with Cherry Tomatoes, Summer Squash, Zucchini, Mushrooms, Potatoes, or Asparagus.
  • Drizzle some ranch dressing on top before serving.

It is generally advised to remove things from the skewers and then serve them on a plate. However, many people can enjoy these straight from the skewers without any problems of course. You can drizzle some ranch on top and then serve these.

You can serve this with rice or cauliflower rice for a low-carb option.

INGREDIENTS

  • 1 lbs Chicken Thighs boneless, skinless
  • 1 tablespoon Salt
  • 1 tablespoon Pepper
  • 1 tablespoon Garlic Powder
  • 1 tablespoon Cayenne Pepper
  • 3 medium sized Red Onions diced
  • 2 medium sized Bell Pepper diced (can use any color)
  • 1 cup Buffalo Sauce use as per your spice tolerance level.

INSTRUCTIONS

  • Chop Chicken thighs into 1-inch pieces. Dice the Bell Peppers and Red Onions. Soak Bamboo skewers in cold water for 20-30 min
  • Season the chopped Chicken pieces with salt, pepper, garlic powder and cayenne pepper. Cover and refrigerate for 1 hour or 8 hours (if possible)
  • Knead the Skewers. Start with Onion, followed by Chicken and then a piece of Diced bell pepper. Repeat until you reach the edge of the skewer.
  • Heat an outdoor grill or indoor grill to 400F or heat a Grill Pan. As it gets hot, place the skewers in it and Grill for 5-7 minutes or until there are charred marks on the chicken and veggies.
    Baste with Buffalo sauce midways.
  • Drizzle some more Buffalo sauce on top and serve immediately.
