Such a beautiful country, but I know what Italy brings in your mind right now! It's just so sad. I really hope that things get better for Italy soon!
It's almost Spring here in Cleveland, but this year has been a helluva long winter. I wanted to make something that would elevate the mood of me and my kids. The next thing I know was, chopping a handful of Tomatoes. Maybe because all things happy starts with Summers and Summers inevitably means Tomatoes 🙂
I have actually make Basil Tomato Sauce many times before but today, I thought of making it in authentic Italian style. I played an Italian Music I love and started with my journey to make creamy Fusilli alla Caprese.
It was so much fun! I actually got my mind of this sad news that's constantly at the back of my head now for some time and felt so refreshed after a while.
Tomato Basil Pasta Recipe is really very easy. I learned it in one of those cooking shows way back and when I first tried it, came out so good that it's always like a staple in my weekly dinner rotations. You can cook Tomato Basil Pasta with Chicken and it makes for a wholesome and healthy dinner recipe which kids would love to indulge in.
Tomato Basil Pasta sauce
The Tomato Basil Pasta sauce is so easy to make. You just need some ripe Tomatoes along with some fresh basil, garlic cloves and of course some Parmigiano-Reggiano.
You can add some Red food color if you wish to, but it really is optional. If you have ripe tomatoes, it'll automatically be Red. If you don't then you can add a drop of red gel food color.
If you have canned tomatoes, they will work perfectly fine for this recipe of Tomato Basil Pasta sauce. Also, you really need to be patient with your sauce and cooking the tomatoes will take time. If you have canned tomatoes then it'll cook fairly quickly. However, I strongly recommend using fresh ripe tomatoes but at this kind of time when it's hard to go out and get stuff, you can work with canned tomatoes itself. However, if you can get your hands on fresh tomatoes, then you should definitely use those. Also, you do not need a whole lot of garlic for this recipe.
Just 3 cloves of garlic worked fine with 3 whole medium-sized Tomatoes for me. Fresh Basil is very important for Tomato Basil sauce. Your sauce will get the sweetness from the Basil leaves. Just break them into halves and throw them into your Pot. If you do not have fresh basil you can use dried ones. However, I used fresh basil and it's just the best. I actually grow my own microgreens at home and always have them handy.
And lastly, Parmigiano-Reggiano. That's just the most important ingredient in this recipe. You can also use some Feta along with Parmesan, but I think that's just useless. This will give you the perfect creamy texture which you need for your cookies.
How to make Creamy Tomato Basil Fusilli Pasta
First, just boil your Pasta with some oil and salt and keep them aside in a colander. Wash it with cold water after you get them out on the colander.
Next, you will have to start making your Tomato Basil Sauce. To start the recipe, first heat some olive oil on a skillet and then add your chopped or canned tomatoes to it.
Cook your Tomatoes on low flame until it gets really soft. Do not be in a hurry to add salt. Your Tomatoes need to get perfectly cooked and this should take time. It took me about 40 minutes to get my tomatoes mashy. Mine weren't too ripe so it took a long time. It really depends on the kind of tomatoes you are using for this recipe. However, one thing is for sure that this will take time so be patient. Be slow with your Pasta, just like Italian Music. It's slow, soft and so romantic 🙂
Next, add the crushed garlic and cook well for a few more minutes.
You can add some water if your sauce is turning out to be too dry. And also add salt at this point so that your tomatoes start to get mushy.
Next, it's time to add your basil leaves. You should use fresh basil leaves. Half your leaves or roughly chop them so that it releases its sweet flavors in the sauce and it tastes amazing.
Now add your Parmesan Cheese to your cooking Tomato Basil Sauce and stir well.
Finally, add the seasoning to your Tomato Basil Sauce. Add Oregano, Dry Basil Leaves, Black Pepper Powder, Red Chili Flakes, and some more Basil leaves.
Add the cooked Fusilli Pasta to the sauce and stir well until well combined.
Serve it hot. If you want you can decorate it with some crushed basil and Chili flakes on the top.
So, that's how you can make Creamy One-Pot Red Sauce Pasta. It's really the best Pasta recipe and also makes for easy cleanup.
