Summers are truly the best time of the year. This amazing time of the year, calls for recipes that are refreshing, zesty, and filled with tropical flavors. I like to use Pineapple in my Summer recipes. Besides using Pineapple for desserts and of course the ever-popular Upside Down Pineapple Cake, I love Pineapple with Chicken or Shrimps.

Pineapple is such a versatile fruit. Its juicy, sweet and has the perfect hint of Tartness which makes it a hero for savory recipes as well.
This Chipotle Spice Mix makes these Chicken pieces exceptionally spicy, which complements the Sweetness of the Pineapple. It brings out the flavors of Pineapple. Also, the Yogurt and Heavy Cream Crema, lends a creamy backdrop to these Tacos, making them juicy and succulent in every bite.

What I love about these Pineapple Chicken Tacos is that it is so flavorful and fresh. The freshness of the Red Onions, Cabbage and Pineapple, complements the spicy grilled Chicken chunks bringing out the heavy chipotle flavor in almost every bite.
Making the Chipotle Grilled Pineapple Chicken Tacos

This Pineapple Chicken taco is actually a very easy and flavorful recipe. This involves a basic 6 steps process.
So, I start by cutting out my Chicken into bite-sized chunks. I have used Chicken Breasts and Thigh pieces because I think they are so flavorful and perfect to use.
I marinate my Chicken with Cumin, Chipotle Chili Powder, Garlic Powder, Taco Seasoning, Salt, and Pepper. I also use Avocado Oil. Avocado Oil helps stick the spices to the Chicken pieces, helping in better penetration of the spices and the layers of flavors.
Avocado Oil is so healthy and perfect for your Chicken seasoning.
Next, I chop my Pineapples. I like to use fresh Pineapples for this recipe. I cut out slices and remove the pit from each slice. I hate to use canned Pineapples for this recipe because it's way sweeter than fresh Pineapples and is also very soft.
Next, I toast my Flour Tortilla until they get charred on both sides. I find Flour Tortilla perfect for this recipe. Although you can use small street size Corn Tortillas as well.

I grill my Chicken pieces over a grill pan with some canola oil. It gets done in just 3-4 minutes. They get perfectly charred and are cooked to perfection.
Making the Sour Cream Crema
For the Crema, I combine Thick Plain Greek Yogurt with Heavy Cream. You can obviously replace Yogurt with Sour Cream.
I combine these two until they get incorporated and mixed. I add some Salt and Pepper and some Cilantro and Lime.
All of this combines to make my creamy, sweet, and zesty Crema! - The perfect backbone to my Pineapple Chicken Tacos...!

For making the Tacos, I fill my Taco shells with chopped Cabbage, Red Onions, Pineapple Chunks, and grilled Chicken Chunks. I top with some of my Crema and some more Lime Juice. Also, you cannot finish of a taco without some Cilantro and that's done!

This Pineapple Chicken tac is not your typical Hawaiian Tacos. I agree it's more or less the same ingredients, but these are grilled Chicken and the Chipotle Spice mix makes all the difference.
Traditional Hawaiian Tacos are so sweet! While that's a perfect recipe in itself and I wouldn't want to disturb it or tweak it. This recipe has a separate fan base.
The Grilled Chicken has such a wonderful flavor. Also, the Pineapple adds to the spiciness of the Chipotle Grilled Chicken, toning down on the spice level and making it a well-balanced dish. I love the Crema, which adds a subtle freshness and creaminess to these Pineapple Chicken Tacos

Chipotle Grilled Chicken Pineapple Tacos
INGREDIENTS
To marinade the Chicken
- 1 lbs Chicken Cut into chunks
- 1 teaspoon Ground Cumin
- 1 teaspoon Chipotle Chili powder
- 1 teaspoon Garlic Powder
- 1 teaspoon Taco Seasoning
- 1 teaspoon Salt
- 1 teaspoon Ground Black Pepper
- 1 tablespoon Avocado Oil
- 1 teaspoon Canola Oil to grill the Chicken
To fill the Taco Shells
- 3 big size Flour Tortillas
- 1 cup Pineapples chopped into bite-sized chunks
- ½ cup Cabbage chopped
- 1 medium sized Red Onion chopped
- ¼ cup Cilantro chopped
- 3 tablespoon Fresh Lime Juice to squeeze over the Tacos
Crema
- ½ cup Thick Greek Plain Yogurt
- ¼ cup Heavy Cream
- 1 teaspoon Lime Juice
- 1 teaspoon Salt
- 1 teaspoon Ground Black Pepper
- ¼ cup Cilantro chopped
INSTRUCTIONS
- Combine the chicken pieces with all the spices and Avocado Oil. Mix with your hands and let it rest, covered on the counter for about 10 minutes.
- After 5 minutes, heat some Canola Oil in a grill pan and grill the chicken pieces, until it gets charred on both sides. It'll take about 3 minutes to get your chicken done.
- Toast the Taco shells until they get charred on both sides.
- Make the crema by combining Yogurt and Heavy cream until well combined. Add the Cilantro, Lime Juice, Salt and Pepper and mix well.
- Fill the Taco shells with cabbage, red onions, Pineapple chunks, and Chicken pieces. Top with the Crema, Chopped Cilantro, and some more Lime Juice. Enjoy!

- You can replace the Yogurt Crema with Avocado Crema. Scoop out the Avocado, by removing the pit, Add some Yogurt or Sour cream and heavy cream to it. Combine it well until its creamy and mushy. Add some Lime juice, salt, and pepper, and mix well.
