It's slowly getting warmer. The days are getting longer. (I can nap a little longer in the afternoon without waking up to see the Sun gone). This season tells me that Winter is about to go. And, we are getting ready for Spring.
The beautiful season of Spring brings a bouquet of cheer and happiness in our lives. Most importantly, it brings Easter. And for me, Easter is all about baking cute recipes. Such as these Chocolate Dipped Strawberry Carrots and Carrot Cake. However, last evening I was getting bored. I wanted to do something new.
So, like everyone else, I opened Pinterest and started looking for more Easter desserts which I can make. Suddenly my eyes went to a beautiful Carrot Patch Cupcake image. I was smitten by the idea of making a carrot patch. I already had a batch of chocolate-covered strawberry carrots from the morning in my fridge. I thought why not do something unique with it? Hence, the thought of making Carrot Patch Muffins floated in my mind.
Carrot Patch Muffins with Strawberry Carrots
These soft, moist and tasty Carrot Patch Muffins with Strawberry Carrots will make an Excellent Easter dessert. I love the concept of making muffins over cupcakes. I generally like my muffins a little savory. Hence I have added one teaspoon of coffee into the mix.
Adding coffee made my muffins taste better. (If you are making them for kids you can choose to add in more sweetness into the mix or just skip the coffee. )
I have used thick Greek yogurt to make my muffins and this is because I hate eggs. I personally like to bake without eggs. Hence I use yogurt with a teaspoon of vinegar. It tastes just the way I want. And, it doesn't even make me miss eggs. (However, you are free to use eggs in the mix)
To make the chocolate strawberry carrots, I have melted white chocolate and used a drop of orange food color. (you can use candy melts if you want).
How I made my Carrot Patch Muffins with Strawberry Carrots
To make these cute and adorable Carrot Patch Muffins with strawberry carrots the first thing I did was wash and dry my strawberries.
Once they were dried I melted my white chocolate and poured a drop of orange food color into it. After stirring it enough, I dipped my strawberries into the mix and carefully wrapped them in chocolate.
I laid them out on a baking tray and allowed them to freeze for a night.
The next morning, I went on to make my chocolate coffee muffins.
To make my muffins the first thing I did was combine all the dry ingredients. I had used refined flour, cocoa powder, coffee, and a pinch of salt. (If you want you can chop some dark chocolate and melt it with and then use it in place of cocoa powder) Dark Chocolate melt makes the muffins really soft. However, they do not rise up, because the melted chocolate makes the batter heavy and there is very little aeration. So, I use cocoa powder instead. Nevertheless, for this recipe, you do not need well-risen muffins because you will have to scoop out the top anyways. So you could go ahead and use dark chocolate bars as well.
Secondly, I made a mix of my wet ingredients - Brown Sugar, Thick Greek Yogurt, Hersheys Chocolate Syrup, vinegar and butter (at room temperature)
After this, I mixed the dry ingredients and wet ingredients. One thing is very important while making muffins. You should never over beat the batter. You could use the hand blender only until all the ingredients mix well with each other. After that, I recommend using a whisk. Do not over mix the batter. It should be lumpy.
Now put your muffins for baking in a pre-heated oven at 428F(220C) for five minutes. After five minutes reduce the temperature by 100 degrees and bake them again for another five minutes. Now, your muffins should be ready.
Now you need to use a spoon to scoop out the middle portion of your muffin. Then you can insert your Chocolate Strawberry Carrots into the hole. (If you want, you can scoop out the middle of the muffin and dump the face of it, into a bag of crushed Oreos. It will make it look like "dirt")
So, this was how I made my Carrot Patch Muffins. I think these muffins will make the best Easter treat or dessert that shall not stay in the plates for long. And, every bunny would love it.
Carrot Patch Muffins with Strawberry Carrots
INGREDIENTS
For Chocolate Covered Strawberry Carrots
- 8 oz White Chocolate
- 20 qt Strawberries
- 1 teaspoon Orange Food Color
For Chocolate Coffee Muffins
Dry Ingredients
- 2 cup Refined Flour
- 2 teaspoon Baking Soda
- 1/4 cup Cocoa Powder
- 1 teaspoon Coffee
- 1 pinch Salt
Wet Ingredients
- 1/4 cup Brown Sugar
- 2 tablespoon Greek Yoghurt
- 1 teaspoon Vinegar
- 1/4 cup Butter
INSTRUCTIONS
Chocolate Strawberry Carrots
- Wash and Dry your Strawberries.
- Melt white chocolate and stir it into a smooth consistency.
- Add one drop of orange food color and stir it nicely.
- Dip your strawberries into the chocolate mix and coat it nicely.
- Allow them to refrigerate for a night.
Chocolate Coffee Muffins
- Mix Refined Flour, Baking Powder, Coffee, and Cocoa Powder. Also, add a pinch of salt to balance the flavors.
- Mix a cup of Brown Sugar with 2 teaspoon of Greek Yogurt, a teaspoon of Vinegar and a Cup of Butter (at room temperature)
- Do not overmix the batter. Just whisk it until you get a lumpy mixture. Your Mixture should not have consistency as that of a Cake batter. It should be lumpy.
- Pre Heat the Oven to 428 F (220 C) and bake your Muffins for 10 Minutes. After 5 Minutes reduce the temperature by 100 degrees and bake for the rest of 5 minutes.
Carrot Patch Muffin
- Use a spoon to scoop out some portion of your muffin from the center.
- Glaze your muffin with Hershey's dark chocolate syrup and sprinkle some crushed Oreos on it.
- Insert your chocolate strawberry carrots right at the center of the muffin.
