Easy No bake Carrot Cake Cheesecake is creamy, moist, soft and just the perfect Spring time and Easter dessert recipe ever! Its so easy to make and tastes beyond delicious.

I just love Carrot Cake. My obsession for Spring and Carrot Cake has no limits. And I'm totally serious about it. Just when its Easter around the corner and the weather starts to get a bit warm, I love to bake Carrot Cakes. And not only Carrot Cakes, I take it a notch further with so many Carrot Cake inspired recipes.

Carrot Cake Cheesecake

Carrot Cake Cheesecake you could say is one of my dream come true Cakes ever! It brings two of my absolute favourite desserts, Carrot Cake and Cheesecake into one.

I love this No Bake Carrot Cake Cheesecake recipe the most. Its much lighter and smoother than baked Cheesecakes. Also its just super simple and so so easy to make.

The hardest part about making a No Bake Cheesecake is the waiting time. Really it takes a helluva patience to have such an indulging cheesecake resting in the refrigerator!!

How to make No Bake Carrot Cake Cheesecake Recipe

Step 1: Making the Crust

  • The first step into making any Cheesecake is to make the crust. So for that combine Graham Cracker Crumbs with melted unsalted butter.
  • Transfer to a removable base cake pan.
  • Even it out. And let it rest in the freezer for about an hour.

Step 2: Making the Cheesecake mix

  • Combine Cream Cheese with Heavy Cream, & Brown Sugar. Beat it together until it gets smooth and creamy.
  • Next add the shredded Carrots, Raisins, Ground Cinnamon, Ground Nutmeg
  • Fold it all together and pour it over the set crust.
  • Even out the top and refrigerate overnight or until it sets perfectly.

Step 3: Cream Cheese frosting

  • Beat together Cream Cheese, Granulated Sugar and Vanilla Extract until it gets smooth and creamy.
  • Pour this over the set Carrot Cake Cheesecake.

Step 4: Decoration

  • Just like I did this really amazing decoration you can do that to.
  • Just make a quick whipped cream or buttercream frosting.
  • Divide it into two parts. Add green and orange food color to them.
  • To make the carrots, draw a small triangle using the orange frosting
  • Use green frosting to make the Carrot Leaves.
  • Cut into slices and enjoy!

How to make Baked Carrot Cake Cheesecake?

To make Carrot Cake Cheesecake you just make the similar crust by combining Graham Cracker crust with melted butter. Layer it out and bake for 10 min @350F or 180C.

Make a Cheesecake filling by combing Cream Cheese with Granulated Sugar, Eggs and Vanilla Extract. Transfer to the baked crust.

Make the Carrot Cake filling by combing Flour with shredded Carrots, Raisins, Cinnamon and nutmeg. Mix it all together.

Now you can add this layer on top or swap it out and make beautiful swirls on top.

Bake @350F or 180C for about 50 minutes. The center of the cheesecake should be slightly jiggly, while the edges should look perfectly set.

Turn off the oven and pop the door open and let the cheesecake sit in the hot oven for about 20 minutes. Remove from the oven and let it rest in the refrigerator overnight.

INGREDIENTS

For the Cheesecake Crust

  • 2 cups Graham Cracker Crumbs
  • 2 cups Butter melted, unsalted

For The Cheesecake Filling

  • 8 oz Cream Cheese
  • 1 cup Heavy Whipping Cream
  • 1 teaspoon Pure Vanilla Extract
  • 1 cup Brown Sugar
  • 1 cup Shredded Carrot
  • ¼ cup Raisins

Cream Cheese frosting

  • 4 oz Cream Cheese
  • 1 teaspoon Vanilla Extract
  • ½ cup Granulated Sugar

Frosting

  • 1 cup Heavy Whipping Cream
  • 1 drop Green Food Color
  • 1 drop Orange Food Color

INSTRUCTIONS

  • Grease a 9" removable base cake pan.
  • Combine Graham Cracker Crumbs with melted butter. Transfer to a greased cake pan. Let it set in the refrigerator for about an hour.
  • Combine Cream Cheese with Heavy Cream and Brown Sugar. Beat until combined through.
  • Fold in shredded Carrots, Raisins, Ground Cinnamon, & Ground Nutmeg. Transfer this to the set cheesecake crust. Even out the top and refrigerate overnight.
  • Make Cream Cheese frosting by beating Cream Cheese, Granulated Sugar and Vanilla Extract. Beat until combined. Pour over the set cheesecake and even it out.
  • Make whipped cream frosting by beating heavy whipping cream. Divide it into three parts. Add green and orange food color to one of them.
  • To make the carrots, use the orange frosting and pipe a triangle and use the green frosting to make green leaves of the carrots. Use leftover whipped cream frosting to frost the cake.
  • Cut into slices and dig in!
