INSTRUCTIONS
Preheat your oven to 350 degrees F and spray a 13x9 inch baking dish with nonstick cooking spray.
Toss the ringed onions in a large bowl with garlic salt, dried thyme, dried parsley, dried oregano, dried mustard, and cayenne pepper.
Layer the seasoned onions into the baking dish, then top evenly with shredded mild cheddar, Gouda, smoked Gouda, mozzarella, and scattered butter cubes.
Cover the baking dish tightly with aluminum foil and bake at 350 F for 40 minutes to tenderize the onions.
Remove the foil and bake uncovered for an additional 30 minutes until the top cheese layer turns crusty, golden brown, and bubbly.
Crack some fresh black pepper one or two rinds on top and serve.
Notes
Shred block cheese at home for superior melting texture, as pre shredded packaged cheese contains anti caking powders.
Texas sweet onions or sweet yellow onions make great substitutions if Vidalia onions are out of season.
Rest the baked casserole for 10 minutes before serving so the bubbly cheese sets for cleaner scoops.
