Salsa Verde Chicken Casserole with Cream Cheese and Mozzarella
Comforting Salsa Verde Chicken Casserole is a one pot casserole with shredded chicken, corn tortillas, salsa verde and mexican cheese, baked to perfection, making for a wholesome easy dinner recipe for the family.
In a bowl stir in the shredded chicken with spices - ground cumin, chili powder, smoked paprika, salt and pepper, and softened cream cheese
Cut the Tortillas in halves or you can cut them into four halves.
Grease a casserole baking dish with oil or cooking spray and pour in about 1/4 cup of the salsa verde.
Add the Corn tortillas in a single layer over it. Top with the shredded chicken mixture, mozzarella cheese and pour in the rest of the salsa verde. Repeat until you reach the top of the baking dish. Top with mexican cheese blend and mozzarella cheese on top.
Bake @350F or 180C for 20-25 min or until the cheese gets golden brown and bubbly on top.
Garnish with freshly sliced Avocados, Pico de Gallo (or some chopped red onions), Jalapeno slices and some freshly chopped cilantro. Serve.
