Old Fashioned Patriotic Red, White and Blue Pinwheel Cookies

INSTRUCTIONS
Whisk flour, baking powder and salt in a bowl. In a separate large bowl, beat butter and sugar until light and fluffy, about 3 minutes. Add egg, vanilla and milk and mix to combine. Gradually add the flour mixture and mix just until the dough comes together. Do not overmix.
Divide the dough into three equal portions. Leave one plain for the white layer. Tint the second with red gel food coloring and the third with blue gel food coloring, mixing each until the color is even throughout.
Roll each portion between sheets of plastic wrap into a 9 by 12 inch rectangle. Refrigerate all three sheets for 10 minutes to firm up.
Stack the three sheets on top of each other, red first, then white, then blue, pressing gently between each layer to adhere.
Starting from one long edge, roll the layered dough into a tight log. Wrap tightly in plastic wrap and refrigerate for at least 20 minutes until very firm.
Preheat oven to 350°F. Slice the log into 1/4 inch rounds and place 2 inches apart on parchment lined baking sheets. Bake 9 to 11 minutes until edges are just barely golden.
Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

NotesAlways use gel food coloring, not liquid. It gives vivid color without softening the dough.Chill the dough at every stage. Cold dough holds its shape and gives you a cleaner swirl when sliced.Use a sharp knife and a gentle sawing motion when slicing the log. A dull knife smears the colors.Roll the log on the counter every 10 minutes while it chills to keep it round and prevent a flat bottom.Pull the cookies out when the edges are just golden. They look slightly underdone in the center but firm up as they cool.The dough log keeps in the refrigerator for up to 3 days or the freezer for up to 3 months before slicing and baking.Baked cookies stay fresh in an airtight container at room temperature for up to 5 days.
