This delightful blackberry icebox cake is a light, no-bake summer dessert featuring layers of rich cream, spiced Biscoff cookies, and a homemade blackberry jam. It tastes remarkably like a classic cheesecake yet requires significantly less effort. Pour the heavy whipping cream and vanilla bean paste into a large mixing bowl. Whisk the cream using a handheld mixer or a stand mixer fitted with a paddle attachment for two minutes until stiff peaks form. Transfer the whipped cream to a separate bowl and set it aside.
Place the softened cream cheese and powdered sugar into the mixing bowl and beat them together until smooth and fully combined. Gently fold the whipped cream and vanilla mixture into the cream cheese mixture using a spatula until uniform.
Take a 9-inch square casserole dish and arrange a flat base layer of Lotus Biscoff cookies across the bottom.
