Jalapeño Peach Chicken is an easy seasoned chicken dinner recipe where chicken breasts are pan-fried and then smothered in a juicy homemade peach glaze and fresh peaches. Jalapeños adds a kick to each bite.
In a medium bowl, add the ingredients for Peach glaze. Mix until incorporated. Set aside.
Chicken
Pat dry chicken breasts until dry. Cut them into small bite sized pieces.
In a small bowl combine salt, black pepper, and chili powder.
Apply this seasoning mix on the chicken.
Add oil to a large non-stick skillet over medium-high heat. Once hot, add chicken breasts cut in cubes. Depending on the size of the skillet, work in batches.
Cook Chicken for 5-minutes and flip over. Reduce the heat to medium-low and cook for another 5-minutes or until the chicken reaches an internal temperature of 165°F. Remove from heat. Transfer the chicken to a plate.
In the same skillet, crank up the heat to medium-high and add Jalapeño Peppers. Cook for 2-3 minutes. Then add in peaches with the Jalapeños. Cook for another 3-minutes or until the peaches have softened.
Pour Peach glaze in to the skillet with the peaches and Jalapeños. Stir well to make sure every peach is evenly coated, in the peach glaze.
Add Chicken back into the skillet, Spoon the glaze on the chicken. Cook for another 1-2 minutes until it's hot again. Serve warm.
