INSTRUCTIONS
Add all the berries and fruits in a bowl. Soak them in Orange juice for 30-60 min. If you're adding booze you can add Rum or Cherry Brandy at this point and let the berries and dry fruits soak in it for 1 hour. (Don't skip orange juice even if you're using booze)
Add it to a saucepan along with Molasses, Cubed Butter, Vanilla Extract, Whole Cinnamon Stick, Star Anise & Orange Zest. Simmer over low heat for 30 min. Once its reduced, remove the cinnamon stick and star anise and allow the fruit mix to cool down to room temperature.
Sieve all the dry ingredients into a bowl. Now pour in the berry mix to it. Add the leftover Orange juice, crack in two eggs, add a pinch of sea salt and baking powder and bring it all together.
Transfer to a baking dish and bake @350F or 180C for 30 min.
Add a layer of cream cheese frosting (if you desire) over the baked and cooled fruit cake. Top with some freshly chopped fruits and sprinkles of your choice. Dust some icing sugar on top.
Cut into slices and dig in!
