Apple Cider Whoopie Pies with Caramel Cream Cheese Frosting
These soft, cake-like apple cider cookies are coated in cinnamon sugar and filled with a rich salted caramel cream cheese frosting for the ultimate fall treat.
Reduce Cider: Simmer 2 cups of apple cider in a saucepan over medium heat until reduced to 1/2 cup. Cool completely.
Mix Dry Ingredients: Whisk flour, baking powder, baking soda, cinnamon, nutmeg, cloves, ginger, and salt in a bowl.
Mix Wet Ingredients: Beat softened butter, oil, and brown sugar until smooth. Add eggs one at a time, followed by vanilla, sour cream, and the cooled cider reduction.
Combine: Fold the dry mixture into the wet ingredients just until combined without overmixing.
Bake: Scoop uniform portions onto a parchment-lined baking sheet using an ice cream scoop. Bake at 350°F for 9 to 10 minutes.
Coat: Let cookies cool for 5 minutes, brush with melted butter, and roll in cinnamon sugar.
Make Frosting: Beat cream cheese, salted caramel syrup, vanilla, cinnamon, and heavy cream until light and smooth.
Assemble: Pipe frosting onto the flat side of one cookie and top with a second cookie to form a whoopie pie.
