20 min Skillet Barbecue Pineapple Chicken

INGREDIENTS

lbs
chicken thighs
boneless, skinless patted dry
1
can
pineapple rings
in juice (reserve 1/4 cup juice)
1
cup
BBQ sauce
1
tablespoon
olive oil
1
teaspoon
garlic powder
Salt and black pepper
as per taste
Fresh scallions
sliced, for garnish

INSTRUCTIONS
Heat olive oil in a skillet over high heat.
Sear patted-dry chicken thighs (5 mins/side) until golden.
Remove chicken; sear pineapple rings 1-2 mins/side.
Return chicken to skillet; add reserved pineapple juice to deglaze.
Add BBQ sauce and garlic powder; toss to coat. Simmer 2 mins until sauce thickens.
Top with scallions and serve.
